Peel the onions, removing the papery skin completely.

Finely chop the peeled onions into small, even pieces.


Transfer the chopped onion into a small bowl and set aside.

Crush each garlic clove flat with the side of the knife and slip off the skin.

Mince the peeled garlic cloves into a fine paste.


Transfer the minced garlic into a small bowl.

Peel the ginger with a peeler, scraping away all the papery skin.

Grate the peeled ginger on the fine side of the grater directly into the bowl with the minced garlic, then stir briefly to combine.


Finely chop the green chillies, including the seeds if you like heat.

Add the chopped green chilli to the garlic and ginger bowl.

Roughly chop the tomatoes into chunky, irregular pieces.
Plum tomatoes · 3 pieceTransfer the chopped tomatoes into a small bowl.

Set the cauliflower on the board and cut away the outer leaves.

Cut the cauliflower into bite-sized florets of roughly equal size, splitting any large ones through the stalk.


Transfer the cauliflower florets into a large bowl.

Add the potato cubes to the bowl with the cauliflower florets.

Pour the oil into a large frying pan and set it over a medium-high heat.

Heat the oil until it shimmers and a cumin seed dropped in sizzles immediately.

Add the cumin seeds and let them sizzle and pop in the hot oil for about 30 seconds until fragrant and a shade darker.

Tip in the finely chopped onion from the bowl.

Fry the onion, stirring regularly, for about 8 minutes until deep golden and soft.


Add the garlic, ginger and green chilli mixture to the pan.

Stir and cook for about 90 seconds until the raw smell of the garlic and ginger disappears.


Add the ground coriander to the pan.

Add the red chilli powder to the pan.

Stir all the ground spices through the onion mixture and cook for 1 minute, stirring constantly, until the spices are fragrant and coat the onion evenly.


Add the roughly chopped tomatoes to the pan.

Cook the tomatoes, stirring and pressing them down with the spoon, for about 5 minutes until they break down into a thick, jammy sauce and the oil begins to separate at the edges.


Tip the cauliflower florets and potato cubes into the pan and stir to coat them well in the masala.

Season with the salt and stir through.

Lay the lid on the pan to trap the steam.

Cook over a low heat for about 20 minutes, lifting the lid to stir every 5 minutes, until the potatoes are completely tender when pierced and the cauliflower is cooked through but holds its shape.

Lift the lid off the pan and set it aside.

Sprinkle the garam masala over the vegetables.

Stir gently to work the garam masala through the dish, then cook uncovered for 1 minute to let any excess moisture evaporate and the spices bloom.


Spoon the aloo gobi into a warm serving dish.
