Apple Crumble
Bramley apples baked soft beneath a buttery flour crumble, served warm in four portions.

Set the oven to 190 °C and allow it to come fully up to temperature.

Peel the apples, working around each one with a peeler and discarding the skin.
Bramley apples · 900 g

Quarter each apple and cut out the core from every piece.


Chop the apple quarters into rough chunks about 3 cm across.


Tip the apple chunks into the baking dish and spread them into an even layer.

Scatter the caster sugar evenly over the apples.

Weigh the flour into a large mixing bowl.

Add the cold butter, cut into small cubes, to the flour.
Unsalted butter · 90 g
Rub the butter into the flour between your fingertips, lifting the mixture as you go, until it resembles coarse, uneven breadcrumbs with a few pea-sized lumps remaining.

Add the demerara sugar to the crumble mixture.
Demerara sugar · 80 g
Stir the sugar through with a wooden spoon until evenly distributed.


Tip the crumble topping over the apples and spread it to cover them completely, then press lightly with the back of the spoon to compact it just a little.

Place the baking dish in the oven.


Bake until the topping is deep golden and the apple juices are bubbling up at the edges, about 40 minutes.


Lift the baking dish from the oven using oven gloves and set it on the counter.


Leave the crumble to rest for 5 minutes so the filling settles and is safe to serve.

Spoon generous portions of the crumble directly from the dish at the table.
