Set the oven to 180 °C and allow it to heat fully before the dish goes in.

Lay the chicken thighs on the chopping board.

Season the chicken thighs all over with salt.

Season the chicken thighs all over with ground black pepper.

Sprinkle the smoked paprika evenly over both sides of the chicken thighs.

Pour the vegetable oil into the large ovenproof frying pan.
Vegetable oil · 30 ml
Set the pan over a medium-high heat and let the oil shimmer before adding the chicken.

Lay the spiced chicken thighs skin-side down in the hot oil in a single layer.

Sear the chicken thighs without moving them for about 5 minutes until the skin is deep golden and releases cleanly from the pan.

Turn each thigh over with tongs and sear the underside for 2 minutes, then transfer the chicken to a plate.


Lift the seared chicken thighs out of the pan onto a plate, leaving the fat behind.

Place the white onion on the chopping board.

Cut away the root and stem, then pull off the papery skin with your fingers.


Halve the peeled onion through the root, then finely chop both halves into small dice.


Scrape the finely chopped onion into the pan with the reserved chicken fat.

Place the green bell pepper on the chopping board.

Cut the green pepper in half, then cut out the core and scrape away all the seeds.


Finely chop the deseeded green pepper into small dice.


Add the finely chopped green pepper to the pan with the onion.

Place the red bell pepper on the chopping board.

Cut the red pepper in half, then cut out the core and scrape away all the seeds.


Finely chop the deseeded red pepper into small dice.


Add the finely chopped red pepper to the pan with the onion and green pepper.

Place the garlic cloves on the chopping board.

Crush each clove lightly with the flat of the knife, then slip off and discard the skins.


Rock the knife over the crushed cloves repeatedly until you have a fine mince.


Add the minced garlic to the pan with the onion and peppers.

Cook the onion, peppers and garlic over a medium heat, stirring often, until they are completely soft and lightly golden, about 6 minutes.


Place the plum tomatoes on the chopping board.
Plum tomatoes · 400 g
Roughly chop the plum tomatoes into chunky pieces, keeping any juices.
Tip the roughly chopped tomatoes and all their juices into the pan.

Add the ground cumin to the pan.

Add the remaining smoked paprika to the pan.

Crumble the dried oregano between your fingers into the pan.

Stir everything together well so the spices are evenly distributed through the tomato mixture.


Cook the tomato mixture over a medium heat, stirring occasionally, for about 5 minutes until it thickens and the tomatoes break down into a rough sauce.

Pour the dry rice into the pan and stir it into the tomato sofrito.

Stir the rice constantly over the heat for about 90 seconds until each grain is coated and the rice smells faintly nutty.


Place the saffron threads into a small bowl.

Pour the water over the saffron threads.

Leave the saffron to steep in the water for 5 minutes until the liquid turns a deep golden yellow.

Pour the chicken stock into the pan over the rice and sofrito.

Pour the saffron water into the pan, scraping out every last thread.

Tuck the bay leaves into the liquid.

Add the remaining salt to the pan and stir to dissolve it into the liquid.

Add the remaining ground black pepper and stir it through.

Give the pan a thorough stir to combine the stock, saffron water, rice and sofrito evenly.


Nestle the seared chicken thighs skin-side up into the rice and stock mixture, pressing them in slightly so they sit level.

Transfer the pan to the oven using oven gloves.


Bake uncovered for 40 minutes until the rice has absorbed all the liquid and the chicken skin is crisp and cooked through.


Remove the pan from the oven using oven gloves and set it on a heatproof surface.


Fish out and discard the bay leaves from the rice.

Scatter the frozen peas evenly over the surface of the rice.

Cover the pan tightly with foil and leave it to rest for 5 minutes so the peas warm through and the rice steams to a perfect finish.


Tear the fresh cilantro leaves roughly and scatter them over the top.

Bring the pan to the table and spoon generous portions of rice onto each dinner plate, setting a chicken thigh on top of each serving.
