Lay the avocado on the chopping board.
Avocado · 1 piece
Cut it in half around the stone, twist the halves apart, lift out the stone and scoop out the flesh with the spoon.

Lay the lemon half on the chopping board.
Lemon · 0.5 piece
Add a pinch of salt and crush with the fork, leaving it a little chunky.
Salt · 1 pinch

Put the bread in the toaster.
Sourdough bread · 2 slice
Pour the oil into the frying pan.
Sunflower oil · 1 tbsp
Heat over a medium heat for 1 minute.

Crack the eggs into the pan, spaced apart.
Egg · 2 piece
Fry for about 3 minutes, spooning a little hot oil over the yolks, until the whites are fully set and the yolks are still runny; for firm yolks, keep frying until the yolks are set. If you're serving anyone pregnant, very young or elderly, use British Lion or pasteurised eggs, or cook the yolks until firm.

Meanwhile, toast the bread until golden.
