Back bacon rashers · 8 piece
Set the pan over a medium-high heat and fry the bacon, turning once with tongs, until the fat is golden and the edges are just crisp.

Lift the bacon rashers out of the pan onto the baking tray, leaving the excess fat behind in the pan.

Slide the baking tray of bacon into the oven to keep warm while you butter the bread.

Cut 8 slices from the loaf and lay them out on the chopping board ready to butter.

Put the butter into the small bowl.
Unsalted butter · 40 g
Use the table knife to spread the butter evenly all the way to the edges of each slice of bread.

Using oven gloves, pull the baking tray of bacon out of the oven.

Lay 2 rashers on each of 4 buttered slices, folding any overhanging pieces back to fit neatly, then set the remaining buttered slices on top, buttered-side down.

Spoon the ketchup into the small bowl so each person can help themselves.
Tomato ketchup · 4 tbsp
Cut each sandwich diagonally in half and place on a plate, then serve the ketchup alongside for dipping.

What you’ll doYou will fry bacon rashers until crisp while the oven warms, then butter bread slices and assemble them with the bacon. The bacon goes into a warm oven while you prepare the bread, so it stays hot during assembly.
