Baingan Bharta
Charred aubergine mashed with caramelized red onion, garlic, ginger and green chilli. Smoky Indian vegetable curry for four.

Set the oven to its highest setting and let it heat fully while you prepare the aubergines.

Place the whole aubergines on the baking tray.

Pierce each aubergine all over with a fork so steam can escape during roasting.


Slide the tray into the oven and roast until the skins are charred and blistered and the flesh feels completely collapsed when pressed.


Lift the tray out of the oven using oven gloves and set it aside.


Leave the aubergines on the tray until cool enough to handle.

Pull away and discard the charred skin from each aubergine, then split them open and scrape all the soft flesh onto the board, discarding the stalks.


Roughly chop through the flesh a few times so it is broken into coarse, uneven pieces, then transfer it to the bowl.


Peel the red onion
Red onion · 300 g

Finely chop the peeled onion into small, even pieces and transfer to the small bowl.


Crush each clove flat with the side of the knife and slip off the skins.
Garlic · 6 piece

Mince the peeled cloves to a fine paste and transfer to the second small bowl.


Scrape the skin from the ginger with the back of the knife blade.
Ginger · 20 g

Mince the peeled ginger as finely as the garlic and mix it into the same bowl.


Cut the stalks from the green chillies.
Green chilli · 3 piece

Finely chop the chillies, keeping the seeds in, and transfer to the third small bowl.


Roughly chop the tomatoes into uneven chunks.
Plum tomatoes · 400 gPour the mustard oil into the frying pan.
Mustard oil · 3 tbsp
Set the pan over a high heat and let the oil heat until it just begins to smoke, which drives off its sharpness.

Turn the heat down to medium before adding the cumin seeds.

Tip the cumin seeds into the hot oil.
Cumin seeds · 1 tsp
Let the seeds sizzle and pop in the oil for about 30 seconds until they darken a shade and smell nutty.

Tip the finely chopped onion into the pan.

Fry the onion over a medium heat, stirring regularly, until it is deep golden and beginning to catch at the edges.


Add the minced garlic and ginger to the pan.

Add the finely chopped green chilli to the pan.

Stir everything together and cook for 2 minutes until the garlic and ginger lose their raw smell.


Sprinkle in the ground turmeric.

Add the Kashmiri red chilli powder.

Add the ground coriander.

Stir the spices into the onion and cook for 1 minute, pressing them into the pan, until the oil begins to separate at the edges.


Tip the roughly chopped tomatoes into the pan.

Cook over a medium-high heat, stirring and pressing the tomatoes, until they completely break down and the masala is thick and the oil floats visibly on top.


Tip all the roughly chopped roasted aubergine into the pan.

Add the salt.

Stir and mash the aubergine into the masala over a medium heat for 5 minutes, pressing and folding until everything is thoroughly combined and the mixture is dry and fragrant.


Scatter the garam masala over the bharta.

Stir the garam masala through the bharta and cook for a further 30 seconds so its fragrance blooms into the dish.


Spoon the bharta into the serving bowl.


Tear the fresh coriander leaves over the top and serve straight away.

What you’ll doYou will roast whole aubergines until their skins blacken and flesh collapses, then scrape the soft flesh onto a board. Meanwhile, you will prep onion, garlic, ginger, chilli and tomatoes separately. You will heat mustard oil until it smokes, temper cumin seeds in it, then build a spiced base with the onion, aromatics and ground spices before adding tomatoes and finally the roasted aubergine, mashing everything together until dry and fragrant.
