Preheat the grill broiler
Peel a garlic clove the 3 garlic cloves
Heat the mustard oil
Add cumin seeds
Add the chopped onion to the frying pan
Rinse the aubergine
Add the rinsed aubergine
Grill the aubergine
Transfer the grilled aubergine to the colander
Peel the rested aubergine
Rinse the fresh ginger
Add the minced garlic cloves and grated fresh ginger to the frying pan
Rinse the green chilli
Add the chopped tomatoes and chopped green chilli to the frying pan
Add the ground coriander, ground cumin, ground turmeric and kashmiri chilli powder to the frying pan
Add salt
Add the water to the frying pan
Simmer the tomato mixture
Add the mashed aubergine to the frying pan
Simmer the tomato and aubergine mixture
Add lemon juice
Transfer the tomato and aubergine mixture from the large frying pan into the serving dish
Garnish the onion, fresh ginger, mustard oil, garlic cloves, tomatoes, ground coriander, ground turmeric, aubergine, lemon juice, water, cumin seeds, green chilli, ground cumin, kashmiri chilli powder and salt with the chopped coriander leaves
