Turn the oven on and set it to 190 °C so it is fully up to heat before the pastry goes in.

Tip the flour into a large mixing bowl.

Add the cold butter, cut into small cubes, to the bowl with the flour.

Rub the butter into the flour between your fingertips, lifting and dropping the mixture, until it resembles fine breadcrumbs with no visible lumps of butter.

Sift the icing sugar into the bowl and stir it through the crumb mixture.

Crack one egg into a small bowl, discarding the shell.

Add the cold water to the egg and beat them together briefly with a fork.

Beat the egg and water together with a fork until fully combined.


Pour the egg mixture into the flour crumbs and stir with a table knife until the dough just begins to clump.

Bring the dough together with your hands, pressing lightly until it forms a smooth ball — do not overwork it.

Wrap the dough tightly in cling film.


Put the wrapped dough in the refrigerator.


Refrigerate the dough for 30 minutes to firm it up and relax the gluten.

Take the dough out of the refrigerator.


Brush the inside of a 20 cm loose-bottomed tart tin lightly with butter.

Unwrap the dough, place it on a lightly floured surface and roll it out into a circle about 3 mm thick and large enough to line the tin with a little overhang.


Lift the pastry over the rolling pin and drape it into the greased tart tin, pressing it gently into the corners and up the sides without stretching, then trim the overhang flush with the rim.

Prick the base of the pastry all over with a fork to prevent it from puffing during blind baking.


Cut a circle of baking paper slightly larger than the tin and lay it over the pastry, then fill it with baking beans.


Pour baking beans over the paper to hold the pastry flat while it blind bakes.

Slide the tart tin into the oven.


Bake the lined pastry case for 15 minutes until the sides are set and beginning to colour at the edges.


Lift the tart tin out of the oven using oven gloves and set it on a heatproof surface.


Lift away the baking paper and beans from the pastry case and discard them.


Return the uncovered tart tin to the oven.


Bake the uncovered pastry for 5 more minutes until the base is pale golden and feels dry to the touch.


Remove the tart tin from the oven with oven gloves and allow the case to cool slightly before adding the filling.


Spread the raspberry jam in an even layer over the base of the warm pastry case, taking it right to the edges.

Put the butter into a medium saucepan over a low heat.

Melt the butter gently over a low heat, swirling occasionally, until completely liquid — do not let it bubble.

Add the caster sugar to the melted butter and stir with a wooden spoon to combine.

Crack the egg directly into the pan, discarding the shell, and stir it in quickly.

Tip in the ground almonds and stir until the mixture is smooth and well combined.

Add the almond extract and stir it through the frangipane.

Stir everything together thoroughly until you have a smooth, glossy frangipane batter.


Pour the frangipane over the jam layer in the pastry case, spreading it gently to the edges with a palette knife so the surface is level.

Scatter the flaked almonds evenly over the surface of the frangipane.

Slide the filled tart tin into the oven.


Bake the tart for 30 minutes until the frangipane is set, golden brown on top and a skewer inserted into the centre comes out clean.


Lift the tart out of the oven with oven gloves and place it on a wire rack.


Leave the tart to cool in the tin on the wire rack for at least 30 minutes before removing it.

Release the sides of the tin, slide the tart onto a serving plate and dust lightly with icing sugar before bringing it to the table.

Bakewell Tart

What you’ll doYou will make a shortcrust pastry, chill it, then line and blind-bake a tart tin. While the pastry cools, you will prepare a frangipane filling by melting butter, stirring in sugar and egg, then ground almonds and almond extract. Spread jam over the baked pastry base, pour the frangipane over it, scatter flaked almonds on top, and bake until the filling is set and golden. Cool in the tin for at least 30 minutes before turning out.
