Banana Bread
Moist banana bread made with ripe bananas, butter, and vanilla. Serves four with a tender crumb and natural sweetness.

Turn the oven on to 180 °C and leave it to come up to temperature.

Rub a little butter all over the inside of the loaf tin, covering the base and sides.
Unsalted butter · 10 g
Press a strip of baking paper into the greased tin so it covers the base and the two long sides with a little overhang on each side.


Peel the bananas and drop them into the large mixing bowl.

Mash the bananas thoroughly with a fork until almost smooth, with just a few small lumps remaining.


Add the butter to the small saucepan.

Set the saucepan over a low heat and stir gently until the butter has fully melted, then remove from the heat.

Pour the melted butter into the mashed banana and stir to combine.

Add the caster sugar to the bowl.

Crack the eggs into the bowl, discarding the shells.

Pour the milk into the bowl.
Whole milk · 60 ml
Add the vanilla extract to the bowl.
Vanilla extract · 1 tsp
Whisk everything together until the mixture is smooth and well combined.


Measure the flour into the medium bowl.
Plain flour · 200 g
Add the baking soda to the flour.

Add the baking powder to the flour.
Baking powder · 1 tsp
Add a pinch of salt to the flour.
Salt · 1 pinch
Whisk the dry ingredients together briefly to distribute the leaveners evenly through the flour.


Tip the dry ingredients into the wet batter.

Fold the dry and wet ingredients together with a wooden spoon, using slow, sweeping strokes and stopping as soon as no streaks of flour remain — do not overmix.


Pour the batter into the lined loaf tin and use the back of a spoon to level the surface.

Place the loaf tin in the oven.


Bake for about 60 minutes, until the loaf is well risen and deep golden on top, and a skewer inserted into the centre comes out clean.

Using oven gloves, lift the tin out of the oven and set it on a wire rack.


Leave the loaf to cool in the tin for 10 minutes.

Lift the loaf out of the tin using the baking-paper handles and set it upright on the wire rack to finish cooling.

Leave the loaf on the rack until it is completely cool before slicing.

Using a bread knife, cut the loaf into thick slices.


Arrange the slices on a serving board and bring to the table.

Pour the batter into a buttered and lined loaf tin and bake until well risen and golden. The loaf must cool in the tin for 10 minutes before you turn it out onto a rack to cool completely.
