Beef and onion stew with braising steak, black peppercorns, and Worcestershire sauce, slow-cooked until tender.
What you’ll doYou will season and sear the beef in batches over a high heat to build colour, then soften sliced onions in the same casserole before building the braising liquid. Once the beef is returned to the pot, the casserole goes into a low oven for two and a half hours. The long, unattended braise is where the work happens, so the critical moments are the initial sear and deglazing the caramelised residue from the pan base before the lid goes on.
