Measure the plain flour into the large mixing bowl.
Plain flour · 400 g
Add the salt to the flour and stir briefly to combine.
Salt · 1.5 tsp
Cut the cold butter into small cubes and add it to the salted flour.
Unsalted butter · 120 g
Using your fingertips, rub the butter into the flour, lifting and crumbling as you go, until the mixture resembles coarse breadcrumbs with no large lumps of butter remaining.

Crack the egg into the small bowl, discarding the shell.
Egg · 1 piece
Whisk the egg briskly until the yolk and white are fully combined.


Pour the cold water into the whisked egg.
Cold water · 100 ml
Add the white wine vinegar to the egg and water and stir to combine.

Pour the egg and water mixture into the flour and butter breadcrumb mixture.

Stir the mixture with a wooden spoon until it comes together into a rough, shaggy dough.


Turn the shaggy dough out onto a clean kitchen counter.

Knead the dough firmly with the heel of your hand, pushing and folding, until it is smooth, supple and no longer sticky, about 2 minutes.

Shape the smooth dough into a ball and place it in the large mixing bowl.

Wrap the bowl tightly with cling film.


Place the covered bowl in the refrigerator.

Allow the dough to rest and chill in the refrigerator for 30 minutes until firm and relaxed.

Remove the bowl of chilled dough from the refrigerator.


Pour the olive oil into the large frying pan and set over a medium heat.

Peel the brown onion and discard the papery skin.

Dice the peeled brown onion into small, even pieces.


Add the diced brown onion to the olive oil in the frying pan.

Peel the garlic cloves and discard the skins.

Mince the peeled garlic cloves finely with the chef's knife.


Scrape the minced garlic into a small bowl and set aside.

Tip the green olives onto the chopping board.
Green olives · 60 g
Roughly chop the green olives into small pieces.


Transfer the chopped green olives to a small bowl and set aside.

Place the eggs in the small saucepan and cover with cold water.

Bring the water to the boil over a high heat and cook the eggs for 10 minutes until hard-boiled, then drain and rinse under cold water to cool before peeling.

Peel the hard-boiled eggs and place them on the chopping board.

Chop the hard-boiled eggs into small, rough pieces.


Transfer the chopped hard-boiled eggs to a medium bowl and set aside.

Hold the red pepper under cold running water and rinse it thoroughly.

Place the rinsed red pepper on the chopping board.

Halve the red pepper, remove the seeds and stalk, and dice the flesh into small, even pieces.


Add the diced red pepper to the brown onion and olive oil in the frying pan.

Sauté the brown onion and red pepper over a medium heat, stirring occasionally, for about 8 minutes until softened and beginning to colour.


Add the minced garlic to the softened onion and red pepper in the pan.

Sauté everything together, stirring constantly, for 1 minute until the garlic is fragrant.


Add the beef mince to the pan, breaking it up with the wooden spoon.

Sauté the beef mince with the vegetables over a medium-high heat, stirring and breaking up any clumps, for about 7 minutes until the meat is browned all over. Check the mince in several places with a thermometer, the tip buried in meat rather than touching the pan: each should read 71 °C.


Sprinkle the smoked paprika over the browned beef mince and stir to coat.

Add the ground cumin to the spiced beef and stir through.

Add the dried oregano to the spiced beef and stir through.

Add the chilli flakes to the beef mince and red pepper mixture and stir to combine.

Sauté the spiced beef filling, stirring constantly, for 1 minute to toast the spices.


Add the tomato paste to the toasted spiced beef and stir well to coat everything.

Pour the beef stock into the beef mince and tomato paste mixture and stir to combine.
Beef stock · 80 ml
Simmer the beef and tomato filling base over a medium-low heat for about 6 minutes, stirring occasionally, until the liquid has reduced and the mixture is thick.

Add the salt to the reduced beef filling and stir through.

Add the black pepper to the reduced beef filling and stir through.

Add the chopped green olives to the seasoned beef filling and stir to combine.

Add the chopped hard-boiled eggs to the beef mince and beef stock mixture and fold gently through the filling.

Spread the beef filling with olives and eggs out onto a large plate to help it cool quickly.
Place the plate of filling in the refrigerator.

Chill the beef filling with olives and eggs in the refrigerator for at least 20 minutes until completely cold.
Remove the chilled beef filling from the refrigerator.

Preheat the oven to 200 °C.

Line the first baking tray with a sheet of baking paper.


Line the second baking tray with a sheet of baking paper.


Turn the chilled dough out onto a lightly floured kitchen counter.

Divide the chilled dough into 12 equal portions and roll each into a smooth ball.



Roll each dough portion out with a rolling pin into a thin circle roughly 15 cm in diameter.


Spoon a generous tablespoon of the chilled beef filling onto the centre of each rolled dough circle, leaving a clear border around the edge.

Fold each filled circle in half over the filling to form a half-moon shape, pressing the edges together firmly to close.

Crimp the edge of each empanada by folding and pressing the pastry border in a series of overlapping pleats with your fingers to seal it completely.

Transfer the sealed empanadas to the lined baking trays, spacing them apart.

Crack the remaining egg into a small bowl and beat lightly with a fork.

Brush the top of each sealed empanada generously with the beaten egg wash to give a deep golden glaze.


Place the trays of egg-washed empanadas in the oven.



Bake the empanadas for about 23 minutes until deep golden brown and the pastry is cooked through and crisp.


Using oven gloves, carefully remove the trays from the oven.

What you’ll doYou will make a butter pastry dough and refrigerate it while you prepare a beef filling with olives and hard-boiled eggs. Once the filling cools, you'll divide the dough into twelve portions, roll them thin, fill and fold each into a half-moon, crimp the edges to seal, brush with egg wash, and bake until golden.
