Beef Tacos
Braised beef tacos with smoked paprika, cumin, and fresh lime. Tender steak shredded and served with plum tomato salsa for four.

Cut the tops and bottoms off the onions, then pull away the papery outer skins and discard them.

Finely chop both halved onions into small, even pieces.


Tip the finely chopped onion into a small bowl and set aside.

Crush each garlic clove lightly with the flat of the knife to loosen the skin, then peel it away.

Rock the knife over the peeled cloves, gathering and chopping repeatedly until the garlic is very finely minced.


Scrape the minced garlic into a second small bowl.

Cut each plum tomato into rough chunks, discarding the woody stem ends.

Halve the jalapeños lengthways, scrape out the seeds if you prefer less heat, then finely chop the flesh.

Add the finely chopped jalapeño to the bowl with the tomatoes.

Gather the coriander leaves and tender stems together and roughly chop them.
Fresh coriander · 30 g

Add half the chopped coriander to the tomato bowl, reserving the rest for garnish.

Squeeze the juice of one lime over the tomato mixture, then stir everything together to make a rough salsa.

Cut each avocado in half lengthways around the stone, then twist the halves apart and lift out the stone with a spoon.

Scoop the avocado flesh out of the skins into the bowl with the minced garlic.


Squeeze the juice of one lime over the avocado flesh to keep it from browning.

Mash the avocado and garlic together with a fork, leaving some texture rather than making it completely smooth.


Add the salt and stir it through the guacamole, then taste and adjust.

Cut the braising steak across the grain into strips about half a centimetre thick.

Measure the ground cumin into a large bowl.

Add the sliced braising steak to the spice bowl.

Toss the beef strips through the spices with tongs until every piece is evenly coated.


Pour the vegetable oil into a large frying pan.

Set the pan over a high heat and let the oil get very hot until it shimmers.

Tip the spice-coated beef strips into the hot oil, spreading them in a single layer.

Leave the beef undisturbed for 2 minutes until a deep brown crust forms on the underside, then turn the strips.


Scatter the finely chopped onion over the beef in the pan.

Stir-fry everything together over high heat for 2 minutes until the onion has softened and the garlic is fragrant.


Pour the water into the pan to braise the beef.

Bring the liquid to a boil, then reduce the heat to low and simmer uncovered for about an hour until the beef is very tender and the liquid has mostly evaporated, stirring occasionally.

Use two forks to pull the tender beef apart into coarse shreds directly in the pan, tossing them through any remaining juices.


Warm the corn tortillas one at a time in a dry frying pan over a medium-high heat for about 30 seconds a side until pliable and lightly charred.

Press each tortilla flat in the hot pan and let it blister and char in spots on both sides, stacking the warmed ones under a clean cloth to keep them soft.

Place the remaining lime on the chopping board.

Lay the warm tortillas on the serving plate and spoon the pulled spiced beef down the centre of each one.

Spoon the tomato salsa over the beef in each taco.


Add a dollop of the seasoned guacamole to each taco.


Scatter the reserved chopped coriander over the tacos and tuck the lime wedges alongside for squeezing.
