Belgian Waffles
Belgian waffles with crispy exterior and tender interior, made with whole milk and vanilla extract. Serves 4.

Add the butter to the small saucepan.
Unsalted butter · 100 g
Set the pan over a low heat and stir gently until the butter is fully melted, then remove from the heat.

Switch on the waffle iron and allow it to heat until the indicator shows it is ready.

Add the flour to the large mixing bowl.

Add the caster sugar to the bowl.

Add the salt to the bowl.

Add the instant yeast to the bowl with the other dry ingredients.

Whisk the dry ingredients together until evenly combined and free of lumps.


Crack each egg and tip the white into the medium bowl, dropping the yolk into a small bowl as you go, keeping all three yolks in the small bowl and the whites in the medium bowl.

Pour the milk into the bowl with the yolks.

Add the vanilla extract to the yolk and milk.

Pour the melted butter into the yolk and milk mixture.

Whisk the yolks, milk, vanilla and butter together until smooth and combined.


Pour the wet mixture into the bowl of dry ingredients.

Whisk the wet and dry ingredients together until you have a smooth, lump-free batter, taking care not to over-mix.


Whisk the egg whites vigorously until they hold firm, glossy peaks.


Add the egg whites to the batter in two additions, folding gently with a large metal spoon using a wide cutting motion to keep as much air as possible.


Brush both plates of the hot waffle iron lightly with butter.

Ladle enough batter onto the centre of the waffle iron to fill the grid without overflowing, then close the lid.

Cook until the waffle is deep golden and crisp and the iron releases steam easily, about 4–5 minutes, then lift the lid.

Slide the waffle onto a warm plate and repeat with the remaining batter, greasing the iron between each waffle, to make 4 waffles in all.
