Cut the veal shoulder into roughly 5 cm cubes and put them into the large heavy-based saucepan.
Veal shoulder · 1,200 g
Pour the water over the veal so the meat is just submerged.
Water · 1,500 ml
Bring the water to a full boil over high heat and let it boil for 5 minutes, skimming off all the grey foam that rises to the surface with a large spoon.

Tip the veal into a colander and discard the blanching water, then rinse the saucepan clean.

Return the rinsed saucepan to the hob and pour in fresh water.

Lift the blanched veal from the colander into the saucepan with the fresh water.

Peel the carrots on the chopping board
Carrots · 200 g
Cut the peeled carrots into 3 cm chunks on the chopping board.

Add the carrot chunks to the saucepan.

Peel the onion and halve it on the chopping board.
White onion · 150 g

Add the onion halves to the saucepan.

Drop the whole cloves into the saucepan.

Tuck the bouquet garni into the saucepan.

Add the salt to the saucepan.

Bring the liquid to a gentle simmer over medium heat, then reduce to low and cook at a bare trembling simmer, partially covered, for 1 hour 30 minutes, until the veal is completely tender when pierced with a knife.

Using a slotted spoon, lift all the veal pieces out of the broth and into a large bowl, leaving the broth and vegetables behind.


Set a sieve over a large jug and strain the broth through it, discarding the onion, carrots, cloves and bouquet garni.


Pour a splash of cold water into the saucepan and swirl it around to rinse away any scum, then discard it down the sink before returning the pan to the hob.

Put the butter into the clean saucepan over medium-low heat.

Let the butter melt gently, swirling the pan, until it is fully liquid and just beginning to foam.

Add the flour to the melted butter all at once.

Stir constantly over medium-low heat for 2 minutes until the roux is pale, smooth and just beginning to smell biscuity — do not let it colour.


Pour the strained veal broth into the roux in a steady stream, whisking vigorously as you go to prevent lumps.


Raise the heat to medium and bring the sauce to a simmer, whisking frequently, then cook gently for 10 minutes until the sauce is smooth and thick enough to coat the back of a spoon.


Put the pearl onions into a small saucepan with just enough cold water to cover them.

Add the butter to the pearl onion pan.

Add the sugar to the pearl onion pan.

Bring to a simmer over medium heat and cook until the water has almost entirely evaporated and the onions are tender and lightly glazed, about 15 minutes.

Wipe the mushrooms clean and put them whole into the frying pan.

Add the butter to the frying pan with the mushrooms.

Cook the mushrooms over medium-high heat, tossing occasionally, for about 5 minutes until they are lightly golden and have released and reabsorbed their liquid.


Crack the egg yolks into a small bowl, discarding the whites.

Add the crème fraîche to the bowl with the egg yolks.
Crème fraîche · 150 ml
Finely grate the zest of the lemon directly into the bowl, then whisk everything together until smooth.
Lemon · 1 piece

Move the zested lemon from the bowl onto the work surface beside the second small bowl, ready to juice.

Squeeze the zested lemon through a citrus juicer into a small bowl, removing any pips.


Ladle about 2 spoonfuls of the hot velouté into a small bowl to temper the liaison.


Quickly whisk the hot velouté into the small bowl of crème fraîche and egg yolk mixture to raise its temperature gently before adding it to the sauce.


Pour the tempered liaison back into the sauce in the large saucepan, whisking constantly.


Stir over the lowest possible heat for 3 minutes to cook the sauce through until it is creamy and coats the spoon richly — do not let it boil or the yolks will curdle.


Add the reserved veal pieces back into the sauce and stir gently to coat every piece.

Tip the glazed pearl onions into the saucepan with the veal.

Add the sautéed mushrooms to the saucepan.

Add the lemon juice to the saucepan and stir gently to combine.


Season the blanquette with salt.
