Cut away the dark green tops and root ends of the leeks, leaving only the white and pale green parts.

Halve each trimmed leek lengthways through the middle.


Hold the leek halves cut-side down under cold running water, fanning the layers open to flush out any grit.

Add the butter to the wide shallow saucepan.
