Buttermilk Pancakes
Fluffy pancakes made with buttermilk and bicarbonate of soda, served four ways. Golden exterior with tender crumb from the acidic dairy base.

Heat the oven to 100 °C so you can keep the cooked pancakes warm while you work through the batter.

Put the butter into a small saucepan.
Unsalted butter · 45 g
Melt 45 g of the butter over a low heat, then remove the pan from the heat and set aside to cool slightly; keep the other 15 g for the pan.

Measure the flour into a large mixing bowl.
Plain flour · 240 g
Add the caster sugar to the flour.
Caster sugar · 15 g
Add the baking powder to the bowl.
Baking powder · 2 tsp
Add the bicarbonate of soda to the bowl.
Bicarbonate of soda · 1 tsp
Add the salt to the bowl.
Salt · 1 tsp
Whisk the dry ingredients together until evenly combined and lump-free.


Crack each egg into a medium bowl, discarding the shells.

Pour the buttermilk into the bowl with the eggs.
Buttermilk · 480 ml
Pour the melted butter into the buttermilk and egg mixture.

Whisk the buttermilk, eggs and butter together until smooth.


Pour the wet mixture into the dry ingredients.

Fold the wet and dry ingredients together with a wooden spoon until just combined — stop when no dry flour is visible; a few lumps are fine and over-mixing will toughen the pancakes.


Rub a little of the remaining 15 g butter around the frying pan with a folded piece of kitchen paper to coat it evenly, then set the pan over a medium heat.

Scoop 3 portions of batter, about 60 ml each, into the pan, spacing them apart, to make rounds roughly 10 cm across. The batter makes 12 pancakes, so you will cook 4 batches of 3.


Cook until bubbles break on the surface and the edges look set and no longer shiny, about 2 minutes.

Flip each pancake with a spatula and cook for a further 1–2 minutes until golden on the underside and cooked through.


Slide the cooked pancakes off the pan onto the baking tray.

Put the baking tray into the oven to keep the first 3 pancakes warm.



Keep the pancakes warm in the oven while you cook the other 3 batches the same way (re-grease, scoop, cook and flip), adding each batch to the tray, to make 12 pancakes in all.

Remove the baking tray from the oven using oven gloves.

Buttermilk Pancakes

What you’ll doYou will whisk dry ingredients together, then fold them into a wet mixture of buttermilk, eggs and melted butter. Working in batches, you will cook spoonfuls of batter in a buttered pan until bubbles break on the surface, flip them, and finish cooking until golden underneath. Each batch goes into a warm oven whilst you cook the rest.
