Caesar Dressing
Caesar Dressing. Creamy emulsion of egg yolks, Dijon mustard, and Worcestershire sauce finished with fresh lemon and aged Parmesan. Serves 4.

Lay the garlic cloves on the chopping board.
Garlic clove · 2 clove
Crush each clove lightly with the flat of the knife and pull off the skin.


Lay the anchovy fillets on the board.
Anchovy fillets in oil · 4 piece
Chop them finely, then smear them to a paste with the flat of the knife.


Scrape the paste into the bowl with the garlic.


Add the egg yolks. The dressing is not cooked, so use pasteurised egg yolks.

Add the mustard.
Dijon mustard · 1 tsp
Add the Worcestershire sauce.
Worcestershire sauce · 1 tsp
Lay the lemon on the board.
Lemon · 1 piece
Whisk until smooth and slightly thickened.


Pour in the olive oil in a very thin stream, whisking all the time, until thick and creamy.
Extra-virgin olive oil · 120 ml

Lay the Parmesan on the board.
Parmesan · 30 g
Finely grate it over the bowl and whisk it in.


Add a pinch of salt.
Fine salt · 1 pinch
Add a pinch of pepper.
Ground black pepper · 1 pinch
Pour into a small serving bowl. Keep it in the fridge and use it within a day.
