Cut the pork shoulder into 5 cm cubes on the chopping board.

Add the lard to the pot with the pork.

Pour in the water so the liquid barely covers the base of the pot.

Pour in the milk.

Halve the oranges across their equator.

Squeeze the juice from each orange half directly into the pot, then drop the spent halves in too.


Set each garlic clove on the board and pull away the papery skin, discarding it.

Lay each peeled clove flat on the board and press firmly with the side of the knife until it splits and flattens.


Add the crushed garlic cloves to the pot.

Tuck the bay leaves into the pot.

Stir everything together so the spices and liquid are evenly distributed around the pork.


Bring the pot to a vigorous boil over high heat, skimming off any grey foam that rises to the surface.

Reduce the heat to a steady simmer and cook uncovered, turning the pork occasionally, until almost all the liquid has evaporated and only the fat remains in the pot.

Once the liquid is gone and the pork is frying in its own fat, turn the pieces with tongs every couple of minutes until they are deeply golden and crisped on all sides.
