Cauliflower Cheese
Blanched cauliflower florets baked in a sharp cheddar and Dijon mustard sauce, topped with more cheddar until golden and bubbling. Serves 4.

Heat the oven to 220 °C.

Pour the water into a large saucepan and bring to a boil over a high heat.
Water · 2,000 ml
Add a generous pinch of salt to the water.

Cut the cauliflower into even florets, discarding the tough core and outer leaves.

Drop the florets into the boiling salted water.

Boil the florets for 6 minutes until just tender but still holding their shape, then lift them out with a slotted spoon.


Tip the florets into a colander and shake it gently to drive off as much water as possible.

Spread the drained florets in an even layer in the baking dish.

Put the butter into a medium saucepan set over a medium heat.

Tip the flour into the pan with the melted butter.
Plain flour · 50 g
Stir constantly over a medium heat for about 1 minute until the mixture forms a smooth paste that pulls away from the sides of the pan.


Pour the milk into the roux in a slow, steady stream, whisking all the while to prevent lumps.
Whole milk · 600 ml
Whisk continuously over a medium heat, bringing the sauce slowly to a gentle boil, until it is thick, glossy and coats the back of a spoon.


Grate the cheddar on the coarse side of the grater into a small bowl.
Mature cheddar · 120 g

Stir the Dijon mustard into the hot béchamel.
Dijon mustard · 1 tsp
Season with the black pepper.
Ground black pepper · 0.5 tsp
Scatter three-quarters of the grated cheddar into the sauce, holding back the rest for the top.

Stir over a low heat until every strand of cheese has melted into a smooth, rich sauce.


Pour the cheese sauce evenly over the cauliflower florets in the 20 x 25 cm baking dish so they are completely covered.

Scatter the reserved grated cheddar evenly over the surface.

Place the baking dish in the oven.



Bake for 20 minutes until the top is deeply golden and bubbling at the edges.


Lift the baking dish out of the oven using oven gloves and set it on a heatproof surface.
