Cheese and Onion Pie

Measure the plain flour into the large mixing bowl.
Plain flour · 300 g
Add the salt to the flour.
Salt · 1 tsp
Place the cold butter onto the chopping board.
Unsalted butter · 180 g
Cut the cold butter into small, even cubes on the chopping board.


Tip the cubed cold butter into the flour and salt.

Rub the butter into the flour between your fingertips, lifting and dropping the mixture, until it resembles fine breadcrumbs.

Drizzle the cold water over the breadcrumb mixture, a tablespoon at a time.

Use a table knife to bring the mixture together into a firm dough, cutting through rather than stirring.


Divide the pastry dough into 2 equal pieces.

Turn the divided pastry pieces out onto the chopping board.

Press each piece into a flat disc with the heel of your hand.

Wrap each flattened disc tightly in cling film.


Place the wrapped pastry discs in the refrigerator.


Chill the pastry discs until firm, at least 30 minutes.

Remove the chilled pastry discs from the refrigerator.


Place the onions on the chopping board.

Peel the onions and halve them from root to tip, discarding the skins.


Slice the peeled onions thinly from root to tip.


Add the butter to the large frying pan.
Unsalted butter · 30 g
Add the olive oil to the butter in the pan.
Light olive oil · 1 tbsp
Set the pan over a medium heat and warm until the butter has melted and the mixture begins to foam.

Add the thinly sliced onions to the pan and stir to coat in the butter and oil.

Season the onions with salt.

Cook the onions over a low-medium heat, stirring occasionally, for about 28 minutes until deeply golden and caramelised.


Remove the pan from the heat and leave the caramelised onions to cool completely.

Crack the eggs into the large bowl, discarding the shells.

Pour the double cream into the bowl with the eggs.
Double cream · 100 ml
Add the Dijon mustard to the eggs and cream.
Dijon mustard · 1 tsp
Whisk the eggs, cream and mustard together until smooth and well combined.


Add the cooled caramelised onions to the whisked egg and cream mixture and stir to combine.

Grate the mature Cheddar directly into the bowl over the onion and egg mixture.
Mature cheddar · 250 g

Crumble the Lancashire cheese into the bowl.
Lancashire cheese · 100 g
Scatter the fresh thyme leaves into the bowl.
Fresh thyme leaves · 1 tsp
Season the filling with salt.
Salt · 0.5 tsp
Add black pepper to the filling.
Ground black pepper · 0.5 tsp
Stir everything together until the filling is evenly combined.


Heat the oven to 200 °C.

Dust the work surface lightly with plain flour.

Unwrap the chilled pastry discs and lay them on the floured work surface.

Roll one pastry disc out on the floured surface to a round about 3 mm thick and large enough to line the pie dish (about 23 cm) with an overhang.


Carefully lift the rolled pastry base over the rolling pin and drape it into the pie dish.


Press the pastry gently into the base and sides of the pie dish, leaving the excess draped over the rim.

Spoon the cheese and onion filling evenly into the pastry-lined pie dish.

Roll the second chilled pastry disc out on the floured surface to a round slightly larger than the top of the pie dish.


Lift the rolled pastry lid over the pie and lay it on top of the filling.

Trim the overhanging pastry from both layers flush with the rim of the pie dish using a sharp knife.


Press the edges of the pastry together firmly all around the rim, then crimp them with a fork to seal.


Cut 3 small slits in the centre of the pastry lid with the tip of a knife to allow steam to escape.


Brush the top of the pie all over with milk using a pastry brush.

Place the pie dish in the oven.



Bake for 38 minutes until the pastry is deep golden and the filling is set.


Remove the pie from the oven using oven gloves.



Leave the pie to rest in the dish for 10 minutes before serving.
