Cherry Clafoutis
A custard-based clafoutis studded with whole fresh cherries (stones in, the traditional way), finished with a dusting of icing sugar.

Preheat the oven to 180 °C.

Add the butter to a 23 cm round baking dish.
Unsalted butter · 15 g
Add the caster sugar to the baking dish with the butter.
Caster sugar · 20 g
Rinse the cherries under cold running water and shake the colander to drain.
Fresh cherries · 500 g
Arrange the washed cherries evenly over the butter and sugar in the baking dish.

Add the flour to the large mixing bowl.
Plain flour · 60 g
Sift the flour through a sieve, shaking it into the bowl to aerate it.


Add the caster sugar to the sifted flour.

Add the salt to the flour and sugar.
Salt · 1 pinch
Stir the flour, sugar and salt together until evenly combined.


Crack the eggs into a mixing bowl, discarding the shells.

Add the whole milk to the eggs.
Whole milk · 300 ml
Add the double cream to the eggs and milk.
Double cream · 100 ml
Add the vanilla extract to the eggs, milk and cream.
Vanilla extract · 1 tsp
Add the kirsch to the eggs, milk, cream and vanilla.
Kirsch · 2 tbsp
Whisk the eggs, milk, cream, vanilla and kirsch together until smooth.


Pour the whisked egg mixture into the bowl with the flour mixture.

Whisk the egg mixture and flour together until you have a smooth, lump-free batter.


Leave the batter to rest for 10 minutes.

Pour the rested batter evenly over the cherries in the dish.

Slide the baking dish into the oven.



Bake the clafoutis in the oven until the batter is set, golden at the edges and just faintly wobbly in the centre.


Remove the baking dish from the oven using oven gloves and set it on the counter.



Leave the clafoutis to rest for 10 minutes before serving.

Dust the rested clafoutis with icing sugar and serve straight from the dish. The cherries keep their stones, as in the traditional French version, so warn everyone before they eat.
