Chicken Chow Mein

Slice the chicken breasts thinly against the grain into strips about 5 mm thick.
Chicken breast · 500 g

Transfer the chicken strips into the medium bowl.

Add the soy sauce to the chicken.
Light soy sauce · 1 tbsp
Add the Shaoxing rice wine to the bowl.
Shaoxing rice wine · 1 tbsp
Add the cornstarch to the bowl.
Cornstarch · 2 tsp
Add the white pepper to the bowl.
Ground white pepper · 1 pinch
Mix everything together thoroughly until the chicken strips are evenly coated, then set aside.


Crush each garlic clove under the flat of the knife to loosen the skin, then peel the skins away.
Garlic · 4 clove

Finely chop the peeled garlic cloves.


Scrape the chopped garlic into the small bowl.

Peel the ginger with a peeler.
Fresh ginger · 20 g

Finely chop the peeled ginger into a fine mince.


Add the chopped ginger to the small bowl with the garlic.

Trim the root ends and any wilted tops from the spring onions.
Spring onions · 4 piece

Strip the outer layer from each trimmed spring onion and discard it.


Slice the peeled spring onions on a slight angle into 3 cm lengths, keeping the white and green parts roughly separate.


Transfer the sliced spring onions to a second small bowl.

Peel the carrots.
Carrots · 150 g

Cut the peeled carrots into thin matchstick strips about 5 cm long.


Transfer the julienned carrots to the large bowl.

Shred the cabbage into thin strips about 5 mm wide.
White cabbage · 200 g

Add the shredded cabbage to the large bowl with the carrots.

Add the bean sprouts to the large bowl with the other vegetables.
Mung bean sprouts · 150 g
Measure the light soy sauce into a third small bowl.
Light soy sauce · 2 tbsp
Add the dark soy sauce to the bowl.
Dark soy sauce · 1 tbsp
Add the oyster sauce to the bowl.
Oyster sauce · 2 tbsp
Add the remaining Shaoxing rice wine to the bowl.
Shaoxing rice wine · 1 tbsp
Add the sesame oil to the bowl.
Sesame oil · 1 tbsp
Stir all the sauce ingredients together until combined.


Fill the large saucepan with the water.
Water · 2,000 ml
Bring the water to a vigorous boil over high heat.

Add the fresh egg noodles to the boiling water and use tongs to loosen them as they go in.
Fresh egg noodles · 400 g

Boil the noodles for 2 minutes until just tender but still with a little bite, stirring once to separate them.

Drain the noodles into a colander and immediately rinse under cold running water to stop the cooking, then shake well to remove excess water.

Add a tablespoon of vegetable oil to the wok.
Vegetable oil · 1 tbsp
Set the wok over the highest heat you have and leave it until the oil is shimmering and just beginning to smoke.

Tip the drained noodles into the hot wok.

Spread the noodles out and leave them untouched for 30 seconds to char slightly on the bottom, then toss and repeat until the noodles have some golden, slightly crispy strands.


Transfer the charred noodles to a large clean bowl and set aside.

Add another tablespoon of vegetable oil to the wok.
Vegetable oil · 1 tbsp
Heat the oil over the highest heat until it is shimmering and nearly smoking.

Add the marinated chicken strips to the wok in a single layer.

Stir-fry the chicken over high heat, tossing constantly, until the strips are golden on the outside and cooked through with no pink remaining, about 3 minutes; the thickest strip should read 74 °C on a thermometer.


Transfer the cooked chicken to a clean medium bowl and set aside.

Add the remaining tablespoon of vegetable oil to the wok.

Add the garlic and ginger to the hot oil.

Stir-fry the garlic and ginger for 30 seconds until fragrant and just turning golden, keeping them moving so they do not burn.


Add the carrots, cabbage and bean sprouts to the wok.

Toss the vegetables over high heat for 2 minutes until they are just wilted but still have crunch.


Return the cooked chicken to the wok.

Add the charred noodles to the wok.

Pour the chow mein sauce all over the noodles, chicken and vegetables.

Toss everything together vigorously over high heat for about 90 seconds until the sauce coats every strand of noodle and the whole dish is piping hot.


Scatter the spring onions over the noodles in the wok.

Give everything a final toss to mix the spring onions through.
