Tip the red lentils into the colander.
Red lentils · 150 g
Add the chana dal to the colander with the red lentils.
Chana dal · 75 g
Add the toor dal to the colander.

Rinse all the lentils and dal together under cold running water, swishing with your hand, until the water runs clear.

Tip the rinsed lentils and dal into the large heavy-based saucepan.

Pour the water over the lentils and dal in the pan.
Water · 900 ml
Add the turmeric to the pan.
Ground turmeric · 0.5 tsp
Bring the pan to a vigorous boil over high heat, skimming off any grey foam that rises to the surface with a spoon.


Peel the aubergine with a peeler.
Aubergine · 200 g

Cut the peeled aubergine into roughly 3 cm chunks.


Add the aubergine chunks to the saucepan.

Peel the pumpkin firmly with a peeler, removing all the skin.


Cut the peeled pumpkin into roughly 3 cm chunks.


Add the pumpkin chunks to the saucepan.

Roughly chop the tomatoes into large pieces.

Add the chopped tomatoes to the saucepan.

Reduce the heat to low, cover with a lid, and simmer gently for about 40 minutes, stirring occasionally, until all the lentils and dal are completely soft and the vegetables have broken down.

Take the pan off the heat and blend the contents to a smooth, thick purée directly in the pan with an immersion blender.


Peel the red onions, halving them through the root.

Finely chop the peeled onion halves.


Transfer the chopped onion to the large frying pan, ready to fry.

Crush each garlic clove firmly with the flat of the knife blade to loosen the skin, then peel it away.

Mince the peeled garlic cloves into a fine paste by rocking the knife back and forth.


Scrape the minced garlic into the small bowl.

Peel the ginger with a peeler.
Fresh ginger · 30 g

Mince the peeled ginger as finely as you can.


Add the minced ginger to the bowl with the garlic.

Finely chop the green chillies, discarding the stalks.

Add the chopped chillies to the bowl with the garlic and ginger.

Add the ghee to the frying pan containing the onion.

Fry the onion in the ghee over medium-high heat, stirring regularly, until it is deeply golden-brown and beginning to crisp at the edges.


Add the cinnamon stick to the pan.

Add the cardamom pods to the pan.

Add the black peppercorns to the pan.

Add the bay leaves to the pan.

Stir the whole spices into the onion and fry for about 1 minute until they are very fragrant and the cardamom pods begin to puff.


Add the garlic, ginger and chilli mixture to the pan.

Fry, stirring constantly, for about 2 minutes until the raw smell of the garlic and ginger disappears and everything smells richly aromatic.


Add the ground coriander to the pan.

Add the remaining turmeric to the pan.

Add the Kashmiri red chilli powder to the pan.

Add the dhansak masala to the pan.

Stir the ground spices into the onion mixture and cook for about 90 seconds, stirring constantly, until the spices are toasted and deeply aromatic and the mixture has darkened slightly.


Add the chicken thighs to the pan, turning each piece to coat it thoroughly in the spiced masala.

Sear the chicken over high heat for about 5 minutes, turning with tongs, until the pieces are lightly browned all over.


Pour the smooth dal and vegetable purée from the saucepan over the chicken and masala in the frying pan.

Add the water to the pan to loosen the curry to a thick, soupy consistency.

Add the tamarind paste to the pan.

Crumble the jaggery into the pan.

Add the salt to the pan and stir everything together.

Bring to a gentle simmer, then cover partially with a lid and cook over low heat for 30 minutes, stirring occasionally, until the chicken is cooked through and the sauce is thick and coating.

Add the fresh fenugreek leaves to the pan, stirring them through the curry.

Add the garam masala to the pan.

Stir the fenugreek and garam masala through and simmer uncovered for a further 5 minutes to let the flavours meld and the sauce tighten. Check the thickest piece reads 74 °C on a thermometer.
