Tip the rice into a medium saucepan.
Short-grain white rice · 400 g
Pour the water over the rice.
Water · 700 ml
Add a pinch of salt to the rice and water.
Salt · 0.5 tsp
Bring the rice to a vigorous boil over high heat, stirring once to unstick any grains from the bottom.

Clap the lid firmly on the saucepan.

Reduce the heat to the lowest possible setting and leave the rice to absorb all the water undisturbed for 12 minutes.

Leave the rice to steam in its own heat, lid still on, for 10 minutes.

Peel the 2 yellow onions on the chopping board
Yellow onion · 2 piece

Finely chop the peeled onions into small, even dice.


Scrape the chopped onion into the large saucepan.

Crush each garlic clove flat with the blade of the knife, then peel away the skin.
Garlic · 4 clove

Finely chop the peeled garlic cloves.


Add the chopped garlic to the saucepan with the onion.

Run the peeler firmly along each carrot to strip away the skin.
Carrots · 2 piece

Roughly chop the peeled carrots into small chunks about 1 cm thick.


Tip the chopped carrot into the saucepan.

Pour the oil into the saucepan over the vegetables.
Sunflower oil · 2 tbsp
Set the saucepan over medium heat and cook, stirring regularly, until the onion is completely soft and golden at the edges, about 8 minutes.


Spoon the curry powder directly into the saucepan.

Add the turmeric to the saucepan.
Ground turmeric · 1 tsp
Add the garam masala to the saucepan.
Garam masala · 1 tsp
Add the flour to the saucepan to help thicken the sauce.
Plain flour · 2 tbsp
Stir everything together vigorously and cook for 90 seconds, pressing the mixture against the base of the pan, until the spices smell fragrant and the flour is absorbed.


Pour in the chicken stock in a steady stream, stirring as you go to prevent lumps.
Chicken stock · 600 ml
Add the soy sauce to the saucepan.
Soy sauce · 2 tbsp
Spoon in the honey.
Honey · 1 tbsp
Drop in the bay leaves.
Bay leaf · 2 piece
Bring to a gentle boil then reduce the heat and simmer uncovered for 20 minutes, stirring occasionally, until the sauce has thickened and the carrots are completely tender.

Fish the bay leaves out of the sauce with a spoon and discard them.


Blend the sauce directly in the saucepan with an immersion blender until completely smooth.


Set the saucepan over the lowest possible heat to keep the sauce warm while you prepare the chicken.

Lay the chicken breasts on the chopping board.
Chicken breast · 800 g
Hold each breast flat and slice it horizontally through the middle to give 2 even escalopes of roughly equal thickness, then place each between two sheets of cling film.



Beat each escalope firmly with a meat mallet until it is an even 1 cm thick all over.


Scatter salt evenly over both sides of the flattened escalopes.

Spread the flour out in a shallow dish.
Plain flour · 80 g
Crack the eggs into a medium bowl, discarding the shells.
Egg · 2 piece
Whisk the eggs until the yolks and whites are fully combined.


Pour the panko breadcrumbs into a large shallow dish and spread them out in an even layer.
Panko breadcrumbs · 150 g
Press each escalope into the flour, turning to coat both sides thoroughly, and shake off any excess.

Dip each flour-coated escalope into the beaten egg, letting the excess drip back into the bowl.

Lay each egg-coated escalope in the panko, pressing firmly on both sides so the crumbs adhere in a thick, even crust.

Turn the oven on to 100 °C to keep the first batch warm, then pour the sunflower oil into a large deep frying pan to a depth of about 1 cm.
Sunflower oil · 400 ml

Set the pan over medium-high heat and warm the oil until a breadcrumb dropped in sizzles immediately and floats.

Lower 4 of the escalopes carefully into the hot oil, leaving space between them, and fry undisturbed for 4 minutes until the underside is deep golden brown.

Turn each escalope over with tongs so the uncooked side faces down into the oil.


Fry the second side for a further 4 minutes until golden and cooked through; check the thickest part reads 74 °C on a thermometer. Set them on the wire rack on a baking tray in the oven, uncovered, to keep warm while you fry the other 4 escalopes the same way: 4 minutes, turn, 4 minutes more, and check them too.






When the second batch is done, bring the tray out of the oven with oven gloves and set the second batch on the rack beside the first with tongs.




Leave the escalopes to rest on the rack so any excess oil drips away and the crust stays perfectly crisp.

Slide the rested escalopes onto a clean chopping board.


Cut each escalope on a slight diagonal into thick slices about 2 cm wide, keeping the pieces together so they hold their shape.


Uncover the rice and run a fork through it to separate the grains.


Spoon a neat mound of rice onto each of 4 dinner plates.


Ladle a generous pool of the smooth curry sauce alongside and partly over the rice on each plate.

What you’ll doYou will start the rice cooking, then build a curry sauce by softening vegetables, toasting spices, and simmering stock until it thickens and the carrots are tender.
