Chicken Teriyaki
Chicken Teriyaki with soy sauce, mirin, and sake glaze. Tender chicken thighs caramelized in a savory-sweet Japanese reduction. Serves 4.

Measure the soy sauce into the small bowl.
Soy sauce · 80 ml
Add the mirin.
Mirin · 80 ml
Add the sake.
Sake · 60 ml
Add the sugar and stir until it dissolves.
Sugar · 20 g

Lay the boneless, skin-on chicken thighs skin-side down in the cold large frying pan.


Drizzle the oil around them.
Vegetable oil · 2 tbsp

Set the pan over a medium-high heat and cook for about 6 minutes, pressing the thighs flat with the spatula, until the skin is deep golden and releases easily.


Turn each thigh with the tongs.


Cook for about 5 minutes more, until the thickest part reads 74 °C on a thermometer.


Pour the sauce into the pan around the chicken.

Bubble for about 4 minutes, turning the chicken with the tongs and basting it with the spoon, until the sauce reduces to a thick, glossy glaze.



Lift the chicken onto a clean chopping board, leaving the glaze in the pan.


Slice each thigh into thick strips.

What you’ll doYou will make a teriyaki glaze by dissolving sugar into soy sauce, mirin and sake. Sear chicken thighs skin-side down until the skin is golden and crisp, then flip and cook through. Pour in the glaze and simmer, turning the chicken and spooning sauce over it until the liquid becomes thick and glossy. Slice and plate with the remaining glaze spooned over.
