Spoon the yogurt into the large bowl.

Halve the lemon and squeeze the juice into the bowl, discarding the pips.

Peel the 3 cloves of garlic
Garlic · 3 clove

Mince the peeled garlic cloves as finely as you can, rocking the knife back and forth until the pieces are tiny.


Scrape the minced garlic into the bowl.

Peel the fresh ginger
Fresh ginger · 15 g

Grate the peeled ginger on the fine side of the grater directly over the bowl.


Scrape any grated ginger from the board into the bowl.

Whisk everything in the bowl together until smooth and evenly combined.


Add the chicken thighs to the marinade.
Boneless skinless chicken thighs · 800 g
Use your hands to massage the marinade thoroughly into every piece of chicken so all surfaces are well coated.

Press a sheet of cling film over the surface of the bowl.


Place the bowl in the refrigerator to marinate.


Leave the chicken to marinate in the refrigerator for at least 4 hours, or overnight for best flavour.

Take the bowl out of the refrigerator and let the chicken come towards room temperature while you prepare the sauce.


Peel the 2 yellow onions
Yellow onion · 2 piece

Halve and finely chop the peeled onions into small, even pieces.


Add the ghee to the large heavy-based saucepan.
Ghee · 40 g
Set the pan over a medium heat and let the ghee melt and shimmer.

Add the cardamom pods to the pan.
Green cardamom pods · 4 piece
Add the whole cloves to the pan.

Add the cinnamon stick to the pan.

Stir the whole spices in the hot ghee for about a minute until the cardamom puffs and the mixture smells fragrant.


Tip the chopped onion into the pan with the spices.

Cook the onion over a medium heat, stirring regularly, for about 15 minutes until it is deeply golden and soft all the way through.


Set the oven to its highest setting and allow it to heat fully.

Line the baking tray with a sheet of baking paper rated for 240 °C.


Lift the marinated chicken pieces out of the bowl and arrange them on the lined tray in a single layer, leaving a little space between each piece.

Slide the tray into the oven.



Roast until the chicken is cooked through and the marinade is charred at the edges, about 18 to 20 minutes.


Pull the tray from the oven using oven gloves and set it aside to rest while you finish the sauce.



Peel the 3 cloves of garlic

Mince the peeled garlic cloves as finely as possible.


Scrape the minced garlic into the pan.

Peel the fresh ginger
Fresh ginger · 15 g

Grate the peeled ginger on the fine side of the grater.


Scrape the grated ginger into the pan.

Stir the garlic and ginger into the onion and cook for 2 minutes, stirring constantly, until the raw smell has gone.


Add the ground cumin to the pan.

Add the ground coriander to the pan.

Add the ground turmeric to the pan.

Add the Kashmiri chilli powder to the pan.

Add the garam masala to the pan.

Stir all the ground spices into the onion base and cook for 90 seconds, stirring constantly, until the spices are fragrant and beginning to stick to the bottom of the pan.


Pour the tomato passata into the pan, scraping up any spices from the bottom.

Add the caster sugar to balance the acidity of the tomato.

Season with the salt.
Fine salt · 1 tsp
Add the neutral oil, which will help the sauce take on a glossy, restaurant-style finish.

Bring the sauce to a gentle simmer and cook, stirring occasionally, for 15 minutes until it has thickened and the oil rises to the surface in a thin red slick.


Pour the double cream into the sauce.
Double cream · 150 ml
Sprinkle the remaining garam masala over the cream.

Stir the cream and garam masala into the sauce until fully combined and the sauce is a rich, uniform orange.


Slide all the roasted chicken pieces from the tray into the sauce.

Stir gently to coat every piece of chicken and simmer together for 5 minutes so the chicken absorbs the sauce and everything heats through. Check the thickest piece reads 74 °C on a thermometer.


Ladle the chicken tikka masala into a warm serving bowl.

What you’ll doYou will marinate chicken thighs in yogurt and spices for at least 4 hours or overnight.
