Weigh the flour into a large mixing bowl.
Strong white bread flour · 350 g
Add the caster sugar to the flour.

Add the fast-action dried yeast to the bowl.

Add the salt, keeping it on the opposite side of the bowl from the yeast.

Whisk the flour, sugar, yeast and salt together until evenly combined.


Pour the milk into a small saucepan.
Whole milk · 120 ml
Warm the milk over a low heat until it is just tepid — no hotter than body temperature — then take it off the heat.

Crack the eggs into a small bowl, discarding the shells.

Beat the eggs lightly with a fork until the yolks and whites are just combined.


Pour the lukewarm milk into the flour mixture.

Pour the beaten eggs into the flour and milk.

Stir everything together with a wooden spoon until a rough, shaggy dough forms with no dry flour remaining.


Turn the dough out onto the work surface and knead it firmly, pushing and folding, for about 10 minutes until it is smooth and slightly tacky but no longer sticky.

Cut the butter into small cubes and place them in the large mixing bowl — it should be at room temperature and very soft.

Add the smooth dough into the bowl with the butter.

Squeeze and work the butter into the dough with your hands, then knead it in the bowl for 8–10 minutes, scraping the sides, until the dough is silky, elastic and all the butter is fully absorbed.

Stretch a sheet of cling film tightly over the top of the bowl.


Put the covered bowl in the refrigerator.


Leave the dough to prove slowly in the refrigerator for at least 8 hours or overnight, until it has roughly doubled in size.

Take the bowl out of the refrigerator.


Break the dark chocolate into small pieces into a heatproof bowl.

Add the butter, cut into small cubes, to the chocolate.

Add the icing sugar to the bowl.

Sift the cocoa powder into the bowl over the other filling ingredients.
Cocoa powder · 20 g
Set the bowl over a saucepan of barely simmering water, making sure the base does not touch the water, and stir gently until the chocolate and butter have fully melted and the filling is smooth and glossy, then remove the bowl from the heat.


Leave the chocolate filling to cool at room temperature, stirring occasionally, until it thickens to a spreadable consistency.

Line the 900 g loaf tin (about 23 × 13 cm and 7 cm deep) with a long strip of baking paper, letting it overhang the two long sides so you can lift the babka out after baking.


Turn the cold dough out onto a lightly floured work surface.

Roll the dough with a rolling pin into a rectangle roughly 30 cm × 40 cm, keeping the thickness even throughout.


Spread the thickened chocolate filling evenly over the rolled dough using a palette knife, leaving a 1 cm border along the far long edge.


Starting from the long edge nearest you, roll the dough tightly away from you into a compact log, then pinch the seam firmly to seal it.

Using a bread knife, cut the log cleanly in half lengthways so both halves reveal the chocolate layers.


Lay the two halves cut-side up and twist them around each other, keeping the layers visible, then tuck the ends underneath to neaten.

Lift the twisted loaf carefully into the lined tin, pressing it gently to fit.

Drape a sheet of cling film loosely over the top of the tin.


Leave the tin at room temperature for about 1½ hours (up to 2 in a cool kitchen, which adds 30 minutes to the total) until the dough has risen noticeably and feels pillowy when you gently press it.

Peel the cling film off the top of the tin and discard it.


Turn the oven to 180 °C and let it heat fully before you bake.

Weigh the caster sugar into a small saucepan.

Bring the mixture to a gentle simmer over a medium heat, stirring until the sugar has fully dissolved, then let it bubble for 1 minute to form a light syrup, and remove from the heat.

Place the tin in the oven.



Bake for 35 minutes until the babka is deep golden brown and sounds hollow when you tap the top.

Wearing oven gloves, take the tin out of the oven.



Immediately brush the entire surface of the hot babka generously with all the sugar syrup so it soaks in and gives the loaf a shiny glaze.


Leave the babka in the tin for 20 minutes until cool enough to handle.
