Chocolate Chip Cookies
Chocolate chip cookies with dark chocolate chips and vanilla, made with butter and bicarbonate of soda for a tender crumb. Serves 4.

Heat the oven to 180 °C.

Line the baking tray with baking paper.


Put the butter into the large mixing bowl.
Unsalted butter · 115 g
Add the light brown sugar to the bowl.
Light brown sugar · 100 g
Add the caster sugar to the bowl.

Beat the butter and sugars together vigorously until the mixture is pale, fluffy and noticeably increased in volume.


Crack the egg into the bowl, discarding the shell.

Add the vanilla extract to the bowl.
Vanilla extract · 1 tsp
Beat everything together until smooth and fully combined.


Tip the flour into the medium bowl.
Plain flour · 190 g
Add the bicarbonate of soda to the flour.
Bicarbonate of soda · 0.5 tsp
Add the salt to the flour.
Fine salt · 1 pinch
Whisk the flour, bicarbonate of soda and salt together briefly to combine them evenly.


Tip the seasoned flour into the butter and egg mixture.

Fold the flour into the wet ingredients with a wooden spoon, using broad strokes, until just combined and no dry streaks remain — do not overmix.


Add the chocolate chips to the dough.

Fold the chocolate chips through the dough until evenly distributed.


Scoop heaped tablespoons of dough onto the lined baking tray, spacing them well apart to allow for spreading, to make 12 rounds.

Slide the tray into the oven.



Bake until the edges are golden and set but the centres still look slightly underdone and soft.


Lift the tray out of the oven using oven gloves and set it on a heatproof surface.



Leave the cookies on the tray for 5 minutes — they will firm up as they cool.
