Classic Cheeseburger
Beef cheeseburgers in toasted brioche buns with cheese, pickles, onion, lettuce and tomato, and a mayonnaise, mustard and ketchup sauce. Serves 4.

Tip the ground beef into the large mixing bowl.

Sprinkle the salt over the beef.

Add the black pepper to the bowl.

Use your hands to mix the seasoning briefly into the beef, working it as little as possible to keep the patties tender.

Divide the seasoned beef into 4 equal portions of about 200 g each.

Press each portion into a flat round patty about 1 cm thick and slightly wider than your bun, then press a shallow dimple in the centre of each with your thumb to stop it doming as it cooks.

Spoon the mayonnaise into the small bowl.

Add the yellow mustard to the bowl.

Add the ketchup to the bowl.

Stir the mayonnaise, mustard and ketchup together until evenly combined into a smooth sauce.


Peel the onion, removing the papery outer layers and trimming the root and top.
White onion · 1 piece

Slice the onion crosswise into thin rings about 3 mm thick.


Transfer the onion rings to a small bowl and set aside.

Slice the tomatoes crosswise into rounds about 8 mm thick, discarding the ends.
Beef tomato · 2 piece

Transfer the tomato slices to a plate and set aside.

Tear the iceberg lettuce into large, burger-sized pieces.

Transfer the lettuce leaves to a plate and set aside.

Add the butter to the large frying pan.
Unsalted butter · 30 g
Set the pan over a medium heat and swirl it until the butter melts and begins to foam.


Split the buns and place them cut-side down in the buttery pan.
Brioche burger buns · 4 piece
Toast the buns without moving them until the cut faces are deep golden.

Lift the toasted buns out of the pan onto a plate and keep them to one side.

Sprinkle a pinch of salt into the hot pan to season the cooking surface before adding the patties.

Lay the four patties into the hot pan, spacing them well apart.

Cook the patties undisturbed over a high heat for 2 minutes until a deep brown crust forms on the underside.


Flip each patty firmly with the spatula in one confident motion.


Lay one slice of American cheese on top of each patty immediately after flipping.

Cook for a further 90 seconds until the second side is browned and the cheese has melted and draped over the edges of each patty. Check the centre of the largest one reads 71 °C on a thermometer.


Place 2 dill pickle slices on the bottom half of each toasted bun.

- Spoon the burger sauce generously over the pickles on each bun bottom, then spread a little on the cut face of each bun top.
- Set a sauced bun bottom on each serving plate, pickle side up, ready to build the burger.
- Lay a piece of lettuce on each bun bottom.
- Place a tomato slice on top of the lettuce on each burger.
- Scatter a few onion rings over the tomato on each burger.
- Slide a cheeseburger patty from the pan onto each stack and press the bun top down firmly to finish.

Classic Cheeseburger

What you’ll doYou will season and shape four beef patties, then prepare a three-way sauce and all the garnishes whilst the buns toast. Once the pan is hot, you will sear the patties hard for 2 minutes each side, topping them with cheese as soon as you flip. Assembly is quick: sauce and pickles on the base, then lettuce, tomato, onion and the hot patty, pressed together.
