Cobb Salad
Cobb salad of pan-cooked chicken breast, crisp bacon, hard-boiled egg, avocado, tomato and crumbled blue cheese on mixed leaves, tossed in a Dijon vinaigrette. Serves 4.
What you’ll doYou will roast bacon until crisp, hard-boil and peel eggs, pan-fry chicken breasts and slice them, then make a vinaigrette by whisking garlic, mustard, Worcestershire and vinegar before emulsifying with oil. Meanwhile, chop lettuces, watercress and chicory, quarter tomatoes, and slice avocados. Dress the leaves lightly, spread them on a platter, then arrange the chicken, eggs, tomatoes and avocado in rows, scatter bacon and crumbled blue cheese over top, and finish with snipped chives.
