Coronation Chicken Salad
Coronation Chicken Salad combines poached chicken breast with a curry-spiced yogurt and mayo dressing, finished with lemon brightness. Serves 4.

Pour the water into a large saucepan.
Water · 1,500 ml
Drop the bay leaves into the water.

Grind the black peppercorns with a pepper mill into a small bowl.

Add a pinch of salt to the water.

Lower the chicken breasts into the cold seasoned water.
Chicken breast · 800 g
Bring the water up to a gentle boil over a medium-high heat, then immediately reduce to a bare simmer.

Simmer the chicken very gently for 15 minutes until cooked through with no pink remaining at the thickest part. Check the thickest piece reads 74 °C on a thermometer.


Lift the chicken breasts out of the poaching liquor onto a chopping board using tongs.


Leave the chicken to cool completely on the board before handling.

Cut each breast into thick slices, then tear each slice roughly into generous bite-sized chunks with your hands.


Spoon the mayonnaise into a large mixing bowl.

Add the Greek yogurt to the bowl.

Spoon in the mild curry powder.

Add the tomato purée.

Spoon in the mango chutney.
Mango chutney · 2 tbsp
Finely grate the zest of the lemon directly into the bowl.

Halve the zested lemon and squeeze the juice through a citrus juicer into the bowl.


Tip the freshly ground black pepper into the bowl.

Stir everything together until the dressing is smooth and evenly combined.


Scatter the sultanas into the dressing.

Tip all the chicken pieces into the bowl with the dressing.

Fold the chicken gently through the dressing until every piece is evenly coated, taking care not to break up the chunks.


Tip the flaked almonds into a dry small frying pan.

Toast the almonds over a medium heat, stirring frequently, until golden and fragrant.

Cut the base off each Little Gem and pull the leaves apart into individual cups.

What you’ll doYou will poach chicken breasts gently in seasoned water until cooked through, then cool and tear them into chunks. While the chicken cools, you'll make a curry-spiced dressing by combining mayonnaise, yogurt, tomato purée, mango chutney, lemon zest and juice, and ground pepper. Fold the chicken into the dressing, toast the almonds, arrange Little Gem leaves on a platter, and finish with the coronation chicken, almonds, and fresh coriander.
