Tip the flour into a wide shallow dish.
All-purpose flour · 180 g
Add the salt to the flour.
Salt · 1 tsp
Add the black pepper to the flour.
Ground black pepper · 0.5 tsp
Add the garlic powder to the flour.
Garlic powder · 1 tsp
Add the onion powder to the flour.
Onion powder · 1 tsp
Add the paprika to the flour.
Paprika · 0.5 tsp
Add the cayenne pepper to the flour.
Cayenne pepper · 0.25 tsp
Stir everything together with a fork until the spices are evenly distributed through the flour.

Crack the eggs into a second shallow dish.
Egg · 2 piece
Pour the milk into the dish with the eggs.
Whole milk · 240 ml
Whisk the eggs and milk together until the mixture is smooth and fully combined.

Lay the cube steaks out on the chopping board.
Beef cube steak · 800 g
Season both sides of each steak lightly with salt.
Salt · 0.5 tspBeef cube steak · step 12
Press each steak firmly into the seasoned flour, turning to coat both sides and patting off any excess, then set them back on the board.

Dip each flour-coated steak into the egg wash, letting the excess drip off, then return them to the board.

Press each steak back into the seasoned flour for a second coat, pressing firmly so the crust adheres on both sides, then lay them on the board to rest for a moment.

Pour the vegetable oil into a large heavy frying pan.
Vegetable oil · 480 mlSet the pan over a medium-high heat and warm the oil until it shimmers and a pinch of flour dropped in sizzles immediately.
Carefully lower the coated steaks into the hot oil and fry without moving them until the underside is deep golden brown, about 4 minutes.
Turn each steak with tongs and fry the second side until equally golden and the coating is crisp, about 4 minutes more.

Lift the steaks out of the pan with tongs and transfer them to a wire rack to drain, keeping them warm.

Carefully pour off most of the oil from the pan, leaving behind about 2 tablespoons of the drippings and any browned bits.
Add the butter to the pan drippings.
Unsalted butter · 30 gSet the pan back over a medium heat and stir with a wooden spoon, scraping up the browned bits, until the butter melts and foams.

Sprinkle the flour into the pan.
All-purpose flour · 60 gStir constantly with a wooden spoon, working the flour into the fat, and cook until the roux turns a pale biscuit colour with a nutty smell.

Pour the milk into the pan in a slow, steady stream.
Whole milk · 480 mlWhisk vigorously as you pour to break down any lumps and incorporate the roux into the milk.

Cook over a medium heat, stirring frequently with a wooden spoon, until the gravy thickens enough to coat the back of the spoon, about 5 minutes.

Season the gravy with salt.
Salt · 0.5 tspAdd the black pepper and stir well — the gravy should be boldly seasoned.
Ground black pepper · 0.5 tsp| # | Product | Tool | Action |

Country Fried Steak
Country fried steak coated in seasoned flour and pan-fried until golden, finished with a savory milk gravy. Serves 4.
What you’ll doYou will season and double-coat cube steaks in a spiced flour mixture and egg wash, then fry them in hot oil until deeply golden on both sides. While they drain, you'll make a roux from the pan drippings and butter, whisk in milk to build a gravy, and season it boldly before serving the steaks topped with the sauce.
