Lower the chicken breasts into the large saucepan.

Pour the water over the chicken so it is fully submerged.

Bring to a gentle boil over medium heat, then reduce to a low simmer and poach the chicken for 20 minutes, until the thickest part reads 74 °C on a thermometer.


Lift the poached chicken breasts out onto the chopping board, leaving all the broth in the pan.

Set the sieve over the large bowl and pour the broth through it, discarding the bay leaves and thyme.


Pull the chicken breasts apart into rough shreds using two forks, discarding any sinew.


Sweep the shredded chicken into the medium bowl and set aside.

Peel the onion, halve it through the root and discard the papery skin.

Tip the finely chopped onion into the melted butter.

Stir the vegetables to coat them in the butter, then cook over medium-low heat for 7 minutes, stirring often, until they are soft and translucent but not coloured.


Stir the minced garlic into the softened vegetables.

Cook for 1 minute, stirring constantly, until the garlic is fragrant.


Scatter the flour over the vegetables.

Stir vigorously for 90 seconds over medium heat until the flour is fully absorbed and beginning to smell biscuity.


Pour in the strained chicken broth gradually, stirring constantly to prevent lumps forming.

Pour in the whole milk and stir to combine.

Bring to a gentle simmer over medium heat, stirring frequently, and cook for 10 minutes until the soup has thickened and the flour taste has cooked out.


Add the shredded poached chicken to the thickened soup and stir it through.

Pour in the double cream and stir to incorporate.
