Creamed Spinach
Creamed spinach with nutmeg and garlic, bound with a silky béchamel sauce. Serves 4.

Tip the spinach into a large colander set in the sink.

Pour a full kettle of just-boiled water slowly over the spinach so it wilts completely.


Leave the spinach in the colander until cool enough to handle.

Gather the spinach into a ball with your hands and squeeze out as much water as you possibly can, working it in batches.

Peel the 2 cloves of garlic

Put the butter into a large frying pan.

Set the pan over a medium heat and let the butter melt completely, swirling occasionally.

Scrape the minced garlic into the pan.

Stir the garlic over a medium heat for about a minute until fragrant but not coloured.


Scatter the flour into the pan.

Stir continuously over a medium heat for one minute so the flour cooks out and forms a smooth paste.


Pour the milk into the pan in a slow, steady stream.
Whole milk · 240 ml
Whisk constantly over a medium heat until the sauce is smooth and thick with no lumps, about 3 minutes.


Pour the double cream into the pan.
Double cream · 60 ml
Stir the cream in thoroughly until the sauce is silky and uniform.


Add the nutmeg to the sauce.
Ground nutmeg · 1 pinch
Add the salt to the sauce.
Salt · 1 tsp
Add the black pepper to the sauce.
Ground black pepper · 1 pinch
Tip the chopped spinach into the pan.

Fold and stir the spinach through the sauce over a medium heat until everything is evenly combined and piping hot.
