Croque Monsieur

Heat the grill to its highest setting.

Put the butter into a small saucepan.
Unsalted butter · 30 g
Melt the butter over a medium heat.

Add the flour to the melted butter and stir constantly for 1 minute until the mixture forms a smooth paste.

Pour the milk into the saucepan with the roux.

Whisk the milk into the roux continuously until the mixture is smooth and lump-free.


Simmer the béchamel base, stirring, for 3 minutes until thickened.

Add the nutmeg to the béchamel and stir to combine.

Add salt to taste and stir through.

Add a good pinch of black pepper and stir through.

Add half the Gruyère to the saucepan.

Stir the Gruyère into the seasoned béchamel until it has melted and the sauce is smooth.


Pour the Gruyère béchamel into a small bowl and set aside.

Lay the 4 thick slices of white bread on the chopping board.

Lay the 4 thick slices of white bread in a single layer on the grill tray.

Slide the grill tray under the hot grill.



Grill the bread for about 2 minutes until one side is lightly golden.


Remove the grill tray from the oven using oven gloves.



Flip each slice of bread over so the untoasted side faces up.


Spread the Dijon mustard evenly over 2 of the flipped bread slices.

Lay the cooked ham over the mustard-spread slices.

Spoon a quarter of the Gruyère béchamel over the ham on each mustard slice, keeping half for the tops.

Press the plain toasted bread slices on top of the filled slices to close the sandwiches.

Spread the remaining Gruyère béchamel evenly over the tops of the closed sandwiches using a palette knife.


Scatter the remaining Gruyère evenly over the béchamel-topped sandwiches.

Grill for 4–5 minutes until the cheese is bubbling and golden and the sandwiches are piping hot.
