Rinse the cucumber
Add the fine sea salt and the sliced cucumber to the colander
Drain the salted sliced cucumber
Add the white wine vinegar, water, caster sugar, yellow mustard seeds, black peppercorns and chilli flakes to the saucepan
Simmer the dried chilli flakes
Transfer the pickling brine into the small saucepan
Add the patted-dry cucumber to the preserving jar
Add the chopped dill to the preserving jar
Pour the pickling brine from the small saucepan into the preserving jar
Seal the filled pickle jar
Chill the sealed cucumber pickle
