Devil's Food Cake
Rich devil's food cake with a deeply fudgy cocoa crumb, covered in a dark chocolate ganache. Serves 4.

Turn the oven on to 180 °C and let it come fully up to temperature.

Put a small knob of butter into the sandwich tin.
Unsalted butter · 10 g
Grease the inside of the tin by rubbing the butter all over the base and sides with a piece of baking paper, then press a fresh disc of baking paper into the base.


Weigh the plain flour into the large mixing bowl.

Add the cocoa powder to the bowl.
Cocoa powder · 40 g
Add the bicarbonate of soda.
Bicarbonate of soda · 1 tsp
Add the baking powder.
Baking powder · 0.5 tsp
Add the pinch of salt.
Salt · 1 pinch
Whisk the dry ingredients together thoroughly so they are evenly combined and free of lumps.


Cut the butter into rough cubes and put them into the medium bowl.

Add the caster sugar to the bowl with the butter.

Add the dark brown sugar.
Soft dark brown sugar · 60 g
Beat the butter and sugars together vigorously until the mixture is pale, light and noticeably fluffy.


Crack the eggs into the bowl one at a time, beating well after each addition until fully incorporated.

Add the vanilla extract.
Vanilla extract · 1 tsp
Beat the mixture for a further minute until smooth and creamy.


Pour the milk into the small bowl.

Add the water to the milk and stir briefly to combine.

Stir the milk and water together until combined.


Add a third of the dry mixture to the creamed base and fold gently until just combined.


Pour half the milk and water mixture into the batter and fold through.

Continue folding in the remaining dry mixture and milk alternately, finishing with dry, until you have a smooth, silky batter with no flour streaks — do not over-mix.


Scrape every last bit of batter into the lined tin and use the back of a spoon to level the surface.


Place the tin in the oven.



Bake until a skewer inserted into the centre comes out with just a few moist crumbs clinging to it and the cake has pulled away slightly from the sides of the tin.


Remove the tin from the oven using oven gloves and set it on a wire rack.



Leave the cake in the tin for 10 minutes so it firms up enough to turn out without breaking.

Run a palette knife around the edge of the tin, then invert the cake onto the wire rack and peel away the baking paper.


Leave the cake to cool completely on the rack before frosting — rushing this will melt the ganache.

Break or roughly chop the dark chocolate into small pieces and put them into the heatproof bowl.

Pour the double cream into the small saucepan.

Add the golden syrup to the cream.
Golden syrup · 1 tbsp
Set the saucepan over a medium heat and warm, stirring gently, until the cream just begins to steam and the first small bubbles appear at the edge — do not let it boil.

Pour the hot cream over the chocolate pieces in one go.

Stir steadily from the centre outward until all the chocolate has melted and the ganache is completely smooth and glossy.


Leave the ganache at room temperature, stirring occasionally, until it thickens to a spreadable consistency that holds its shape when lifted on a spoon.


Lift the cooled cake carefully onto a cake stand.

Spoon the ganache onto the top of the cake and use a palette knife to spread it generously over the top and down the sides in sweeping strokes, letting it drip naturally at the edges.
