Tip the adzuki beans into the medium saucepan.

Pour in 600 ml of cold water.

Bring to a vigorous boil over a high heat and boil for a minute to take away the bitterness.

Tip the beans into the colander in the sink.

Rinse the beans briefly under cold running water.

Tip the beans back into the saucepan.

Pour in 1 litre of cold water.

Bring to the boil over a high heat.

Lower the heat and simmer gently for about an hour, until a bean crushes easily between two fingers.

Tip the beans back into the saucepan.

Add 160 g of the caster sugar.

Add a pinch of salt.

Cook over a medium heat for about 20 minutes, stirring all the time and mashing the beans roughly, until the paste is thick enough to hold a line drawn across the base of the pan.


Scrape the anko into the shallow dish and spread it out.


Leave the anko to cool completely, about 30 minutes.

Crack the eggs into the large mixing bowl, discarding the shells.

Add the remaining 90 g of caster sugar.

Whisk hard for about 2 minutes, until pale and thick enough to fall from the whisk in a ribbon.


Add the honey.

Whisk the honey in.


Put the bicarbonate of soda in the small bowl.

Add 30 ml of water.

Stir until dissolved.


Pour the bicarbonate into the egg mixture.

Whisk briefly to combine.


Sift the flour into the bowl through the sieve.

Whisk gently until smooth, with no dry streaks.


Wipe half a teaspoon of oil thinly over the griddle with kitchen paper.
Vegetable oil · 0.5 tsp

Warm the griddle over a low heat.

Ladle in batter for 4 pancakes, spaced apart, letting each spread to about 9 cm across.


Cook for about a minute, until bubbles cover the surface and the edges look set.

Turn each pancake over with the spatula.


Cook for about 30 seconds more, until the second side is lightly golden.

Lift the pancakes onto the plate with the spatula and cover them with the tea towel to keep them soft.



Wipe half a teaspoon of oil thinly over the griddle with kitchen paper.

- Lift the pancakes onto the plate with the others using the spatula, and cover them again with the tea towel.
- Turn 4 pancakes pale side up and spoon a quarter of the anko onto the centre of each.
- Press a second pancake on top of each, pale side down, and press gently round the edges.
