Lay the spring onions on the chopping board.

Spoon the dark soy sauce into a second small bowl.

Add 2 teaspoons of the light soy sauce.
Light soy sauce · 2 tsp
Add 3 teaspoons of the oyster sauce.
Oyster sauce · 3 tsp
Add the sugar.

Put the rice noodles in the colander.
Fresh flat rice noodles · 400 g
Gently pull the strands apart; if they are cold and stiff, pour a kettle of hot water over them first and let them drain.

Lay the beef on the chopping board, after the spring onions.
Beef sirloin · 250 g
Slice it thinly across the grain.


Put the beef in the medium bowl.

Add the bicarbonate of soda.
Bicarbonate of soda · 0.25 tsp
Add 2 teaspoons of light soy sauce.
Light soy sauce · 2 tsp
Add 3 teaspoons of oyster sauce.
Oyster sauce · 3 tsp
Add the Shaoxing wine.
Shaoxing rice wine · 1 tsp
Add the cornflour.
Cornflour · 1 tsp
Add the sesame oil.
Sesame oil · 0.5 tsp
Add a quarter teaspoon of white pepper.
Ground white pepper · 0.25 tsp
Add 1 tablespoon of the neutral oil.
Neutral oil · 1 tbsp
Mix with the chopsticks until every slice is coated.


Pour 2 tablespoons of the oil into the wok.

Heat over the highest heat until just smoking.

Leave it for 45 seconds to sear.

Toss for about 45 seconds more, until just cooked.

Add the last 2 tablespoons of oil to the wok.

Add the noodles, spreading them out.

Leave for 30 seconds at a time, then toss gently, for about 2 minutes, until lightly charred in places.


Toss until every strand is evenly coloured.


Add the bean sprouts.

Add the rest of the white pepper.

What you’ll doYou will marinate thin slices of sirloin with soy, oyster sauce, Shaoxing wine and cornflour, and mix a dark soy sauce. In a smoking-hot wok, sear the beef and set it aside, then char the noodles, toss them with the sauce, and finish with the beef, bean sprouts and spring onions.
