Turn the oven to 230 °C (210 °C fan).

Crack the eggs into the blender.

Blend on high for 30 seconds, until smooth and a little frothy.

Put the butter in the cast-iron skillet.

Heat for about 5 minutes, until the butter has melted and is starting to turn golden.

Set the skillet on a heatproof surface and pour the batter into the middle in one steady stream.

Pour the batter in immediately, return the skillet to the oven, and bake without opening the door until the pancake puffs dramatically and sets. While it bakes, zest a lemon.
