Set the oven to 100 °C so you can keep the bacon and muffins warm while you finish the dish.

Put the butter into the small saucepan.
Unsalted butter · 200 g
Melt the butter over a low heat, then let it sit for a minute so the milk solids settle to the bottom — you will use only the clear yellow butter above them.

Separate the eggs, dropping the yolks into the heatproof bowl and keeping the whites covered in the fridge for another use.
Egg yolks · 3 piece
Add the white wine vinegar to the yolks.
White wine vinegar · 1 tbsp
Whisk the yolks and vinegar together until the mixture is pale and slightly thickened.

Pour a shallow depth of water into the medium saucepan.
Water · 500 ml
Bring the water to a gentle simmer over a medium heat.

Set the heatproof bowl over the saucepan, making sure it sits above the water without touching it.

Whisk the yolk mixture steadily over the steam until it thickens enough to leave a ribbon trail on the surface when you lift the whisk — the bowl should be hot but not burning to the touch.

Lift the bowl off the saucepan and set it on the kitchen counter.

Squeeze the lemon into the small bowl using a citrus juicer.
Lemon · 1 piece

Pour the clear melted butter into the yolks in a very slow, thin stream, whisking constantly, leaving the milky sediment behind in the saucepan, until you have a thick, glossy hollandaise.

Squeeze in a little of the lemon juice and whisk to combine, tasting as you go for brightness.

Season the hollandaise with a pinch of salt and stir briefly.
Salt · 1 pinch
Cover the bowl with cling film and set it somewhere warm while you cook the bacon and poach the eggs.

Lay the bacon rashers flat in the large frying pan.
Back bacon rashers · 8 piece
Fry the bacon over a medium-high heat for about 2–3 minutes per side until golden and cooked through, turning once with tongs.

Slide the pan into the oven to keep the bacon warm while you finish everything else.

Split each English muffin in half with the bread knife.
English muffins · 4 piece

Transfer the muffin halves cut-side up onto the baking tray.

Place the baking tray in the oven to warm the muffins through for a few minutes.

Fill the wide deep saucepan with water to a depth of about 6 cm.
Water · 500 ml
Add the white wine vinegar to the poaching water to help the whites hold together.
White wine vinegar · 1 tbsp
Bring the water to a bare simmer over a medium heat — you want small bubbles rising gently, not a rolling boil.

Crack each egg individually into the small bowl, ready to slide into the water one at a time.
Egg · 4 piece
Slide the eggs one at a time into the simmering water, tipping the bowl close to the surface, and poach for 3–4 minutes until the whites are fully set but the yolks are still soft. Use pasteurised eggs for runny yolks, or cook them 3 minutes more until firm.

Lift the poached eggs out with the slotted spoon, draining them well, and rest them briefly on the plate to blot the water.

Crack the remaining 4 eggs individually into the small bowl.
Egg · 4 piece
Slide the second batch of eggs into the still-simmering poaching water and cook for 3–4 minutes as before.

Lift the second batch out with the slotted spoon and drain on the plate.

Remove the muffin tray from the oven using oven gloves.

Place 2 warm muffin halves cut-side up on each dinner plate.

Drape a rasher of bacon over each muffin half.

Set a poached egg gently on top of each bacon-topped muffin.

Peel the cling film from the hollandaise bowl to uncover the sauce.

Spoon a generous amount of hollandaise sauce over each egg, letting it drip down the sides.

Finish each plate with a pinch of ground black pepper and serve at once.
Ground black pepper · 1 pinch

Eggs Benedict
Poached eggs on warm English muffins with back bacon and hollandaise sauce made from egg yolks and unsalted butter.
What you’ll doYou will make a warm hollandaise sauce by whisking egg yolks over steam and slowly incorporating melted butter, then fry bacon and poach eggs in two batches while warming muffins in the oven. The timing is tight: everything must finish within minutes of each other so you can assemble and serve the dish hot.
