Crack the eggs into the shallow dish one at a time, discarding the shells.
Egg · 2 piece
Pour the milk into the shallow dish with the cracked eggs.
Whole milk · 60 ml
Add the fine salt to the egg and milk mixture.
Fine salt · 0.25 tsp
Add the black pepper to the seasoned egg mixture.
Ground black pepper · a pinch
Whisk the eggs, milk, salt and pepper together until the mixture is smooth and uniform.

Cut one slice of white bread about 2 cm thick and lay it on the chopping board.
White bread · 1 slice

Lay the slice of white bread flat in the whisked custard.

Leave the bread to soak in the custard for 30 seconds so it absorbs the mixture.

Flip the bread over in the dish so the unsoaked side faces down into the custard.

Leave the bread to soak on the second side for a further 30 seconds until evenly saturated.

Lift the soaked slice of bread onto a plate and set it aside while you soak the second slice.

Cut the second thick slice of white bread and lay it on the chopping board.
White bread · 1 slice

Lay the second slice of white bread flat in the remaining whisked custard.

Leave the bread to soak in the custard for about 30 seconds, until saturated but still holding together.

Flip the bread over so the unsoaked side faces down into the custard.

Leave the bread to soak on the second side for a further 30 seconds until evenly saturated.

Add the butter to the frying pan.
Unsalted butter · 15 g
Add the sunflower oil to the butter in the frying pan.
Sunflower oil · 1 tsp
Set the pan over a medium heat and let the butter melt into the oil, swirling once, until it is foaming.

Lay the first soaked slice of bread into the foaming butter and oil.

Lay the second soaked slice of bread alongside the first in the pan.

Fry the bread undisturbed for 3 minutes until the underside is deep golden and set.

Flip both slices over with a spatula in one confident movement.

Fry for a further 3 minutes until the second side is equally golden and the centre feels set but still soft.
