Turn the oven to its highest grill setting and let it heat fully.

Place the ears of corn on the baking tray.

Put the butter into a small bowl.

Microwave the butter in short bursts until fully melted.

Brush the melted butter all over each ear of corn to coat them evenly.


Slide the baking tray under the hot grill.



Grill the corn, turning with tongs every few minutes, until the kernels are deeply charred in spots all around.


Lift the tray out of the oven using oven gloves and set it on the counter.



Spoon the mayonnaise into a small bowl.

Add the sour cream to the same bowl.

Cut both limes in half through the equator.

Squeeze the juice from both limes into the bowl, then stir the mayonnaise, sour cream and lime juice together until smooth.


Add the salt to the crema.

Stir the salt through the crema until fully combined.


Grate the cotija cheese into a small bowl so it is ready to press onto the corn.
Cotija cheese · 80 g

Lift the charred ears of corn onto a serving platter.


Brush a generous coat of the seasoned crema all over each ear of corn, covering every side.


Press and sprinkle the grated cotija evenly over all four ears so the cheese clings to the crema.

Dust the chili powder over the corn.
