Press the flat of the knife onto the garlic clove to loosen the skin, then pull the skin away and discard it.

Add the cotija cheese to the small bowl.

Chop the coriander leaves roughly on the chopping board.

Halve each lime through the equator on the chopping board.

Slide the lime halves onto a small plate to clear the board for the corn.

Spoon the mayonnaise into the medium bowl.

Add the soured cream to the mayonnaise in the bowl.

Scrape the minced garlic into the bowl with the mayonnaise and soured cream.

Add the fine salt to the mayonnaise, soured cream and minced garlic in the bowl.

Stir the mayonnaise and soured cream mixture together until smooth and well combined.


Set the garlic mixture aside at room temperature until ready to use.

Brush the corn cobs all over with neutral oil on the chopping board.

Place a griddle pan over a high heat and let it get smoking hot.

Lay the oiled corn cobs on the hot griddle pan and cook, turning with tongs, until deeply charred on all sides.


Transfer the charred corn cobs from the griddle to a large plate.

Brush the garlic mixture all over the charred corn cobs generously, coating every surface.

Scatter the crumbled cotija cheese evenly over the elote.
Dust the chilli powder evenly over the elote.

Elote (Mexican Street Corn)
Charred corn on the cob coated with mayonnaise, soured cream, cotija cheese, chilli powder and coriander leaves, finished with lime.
What you’ll doYou will prepare a garlicky cream mixture and char corn cobs on a hot griddle until deeply blackened. Once charred, you'll coat the corn generously with the garlic cream, then top it with crumbled cheese, chilli powder and fresh coriander. Lime halves go alongside for squeezing at the table.
