Put the flour in the large mixing bowl.
Plain flour · 400 g
Add 1 teaspoon of the salt.
Salt · 1 tsp
Add the cold butter, cut into small cubes.
Unsalted butter · 100 g
Add the cold lard in small pieces.
Lard · 60 g
Rub the fat into the flour with your fingertips until it looks like coarse breadcrumbs.

Break 1 egg into the small bowl.
Egg · 1 piece
Add the cold water and beat with the fork.
Cold water · 120 ml

Pour it into the crumbs and mix with the table knife until it clumps.


Bring it together into a smooth ball, kneading as little as possible.

Cover the bowl with cling film.


Put it in the fridge.


Chill for at least 30 minutes.

Put 1 egg in the small saucepan.
Egg · 1 piece
Cover with 500 ml of cold water.
Water · 500 ml
Bring to the boil.

Simmer for 9 minutes.

Drain in the colander and run under cold water until cool.

Peel the drained eggs


Chop it roughly.


Lay the onion on the chopping board.
Brown onion · 1 piece
Cut it in half through the root and peel off the skin.


Lay the red pepper on the board.
Red pepper · 1 piece
Cut out the core and seeds and dice it finely.


Lay the garlic cloves on the chopping board.
Garlic clove · 3 clove
Crush each clove lightly with the flat of the knife and pull off the skin.


Lay the pitted olives on the board.
Green olives · 60 g
Pour the olive oil into the large frying pan.
Extra-virgin olive oil · 2 tbsp
Heat over a medium heat.

Cook for about 6 minutes, stirring, until soft.


Add the garlic and stir for a minute.

Turn the heat to medium-high and add the beef mince.
Minced beef · 500 g
Cook for about 8 minutes, breaking it up, until no pink remains.


Add the paprika.
Smoked paprika · 1 tsp
Add the cumin.
Ground cumin · 1 tsp
Add the oregano.
Dried oregano · 1 tsp
Add the chilli flakes.
Chilli flakes · 0.5 tsp
Add the tomato paste.
Tomato paste · 2 tbsp
Add the rest of the salt.
Salt · 1 tsp
Add the pepper and cook for 2 minutes more, stirring.
Ground black pepper · 0.5 tsp

Take the pan off the heat and spoon the filling into the large bowl.


Leave to cool for 20 minutes.

Turn the oven to 200 °C (180 °C fan).

Line a baking tray with baking paper.


Line a second baking tray the same way.


Take the dough out of the fridge and uncover it.



Turn it out onto the counter.

Roll it out about 3 mm thick.


Cut out 12 rounds about 12 cm across around a small plate, re-rolling the trimmings once.


Put 2 heaped tablespoons of filling on one half of each round on the first tray.


Fill the rounds on the second tray the same way.


Fold each round over into a half-moon and pinch and twist the edge to seal.

Break the last egg into a fourth small bowl.

Beat it with the fork.


Brush the first tray of empanadas with egg wash.


Brush the second tray with the rest.


Using oven gloves, put the first tray in the oven.



Put the second tray on the shelf below.



Bake for about 22 minutes, until deep golden.

Put the second tray in on the shelf below at the same time, and swap the trays over halfway through.

What you’ll doYou will make a short pastry with butter, lard, egg and water and chill it, and hard-boil an egg. Cook onion, red pepper and garlic, brown the beef mince with paprika, cumin, oregano, chilli and tomato paste, cool it and fold in the chopped egg and olives. Roll and cut 12 rounds, fill and fold them into crimped half-moons, brush with egg and bake for about 22 minutes until golden.
