Eton Mess combines crushed vanilla meringue with whipped double cream and fresh strawberries for a classic British dessert with contrasting textures.

Lay the strawberries on the chopping board.
Fresh strawberries · 500 g
Add 1 tablespoon of icing sugar and toss gently.
Icing sugar · 1 tbsp

Pour the cream into the large mixing bowl.
Double cream · 600 ml
Add the other tablespoon of icing sugar.
Icing sugar · 1 tbsp
Add the vanilla.
Vanilla extract · 1 tsp
Whisk until it holds soft, floppy peaks; stop before it turns stiff.


Break the meringues into rough chunks over the cream.

Spoon over the strawberries and all their juice.


Fold together with 4 or 5 strokes of the large metal spoon, leaving streaks.

What you’ll doYou will hull and halve fresh strawberries, then macerate them with icing sugar for 15 minutes to draw out their juices. While they rest, whisk double cream with icing sugar and vanilla to soft peaks. Break meringue into rough chunks, then fold the strawberries, cream and meringue together with just four or five strokes, leaving the mixture streaked and marbled rather than fully combined.
