Tip the dried chickpeas into a large bowl.

Cover the chickpeas generously with cold water so they are submerged by at least 10 cm.

Leave the chickpeas to soak at room temperature for 24 hours.

Tip the soaked chickpeas into a colander and drain them thoroughly, discarding the soaking water.

Peel the red onion and halve it through the root.

Roughly chop the onion into large pieces.


Tip the roughly chopped red onion into the bowl of a food processor.

Crush each garlic clove under the flat of the knife blade, then peel away and discard the skin.

Add the peeled garlic cloves to the food processor.

Add the flat-leaf parsley to the food processor.

Add the drained soaked chickpeas to the food processor.

Pulse the mixture in 10 short bursts, scraping down the sides between pulses, until it resembles coarse, slightly damp breadcrumbs that just hold together when pressed — stop well before it becomes a paste.

Add the bicarbonate of soda to the falafel mixture in the food processor.

Add the plain flour to the falafel mixture in the food processor.

Give the mixture 3 or 4 quick pulses to incorporate the bicarbonate of soda and flour evenly.

Scrape the falafel mixture into a large bowl.

Press a sheet of cling film directly over the surface of the mixture.


Place the covered bowl in the refrigerator.


Leave the mixture to chill for 30 minutes until it is firm enough to shape.

Take the bowl out of the refrigerator.


Use a tablespoon to scoop 20 equal portions of the chilled falafel mixture onto the kitchen counter.

Roll each portion firmly between your palms into a smooth ball, then press it gently into a slightly flattened disc about 4 cm across.

Scatter the sesame seeds over the shaped falafel and press them gently onto the surface of each disc so they adhere.

Mince the garlic as finely as you can, then drag the flat of the blade across it repeatedly until it is almost a paste.


Scrape the minced garlic into a medium bowl.

Add the tahini to the bowl with the garlic.

Halve the lemons and squeeze the juice of both through a citrus juicer directly into the bowl.

Add the salt to the tahini mixture.

Whisk everything together vigorously until the sauce is smooth, pale and pourable — it will seize up at first then loosen into a creamy consistency.


Pour the sunflower oil into a deep, heavy saucepan.
Sunflower oil · 800 mlSet the pan over a medium-high heat and bring the oil to 175 °C, checking with a thermometer.
Lower the shaped falafel into the hot oil in 2 batches using a slotted spoon and fry for 3 to 4 minutes per batch, turning them once, until they are deep golden brown and crisp all over.

Lift the fried falafel out with the slotted spoon and transfer them to a plate lined with kitchen paper to drain briefly.


Arrange the hot falafel on a large serving plate.

Spoon the tahini sauce generously over the falafel and serve the rest alongside in the bowl.
