French Onion Tart
Caramelised yellow onions, cooked slowly with bay and thyme, set in a cream custard under a golden Gruyère top in a buttery pastry shell.

Tip the flour into a large mixing bowl.
Plain flour · 200 g
Add the salt to the flour.
Fine salt · 0.25 tsp
Add the cold butter, cut into small cubes, to the bowl.
Unsalted butter · 100 g
Rub the butter into the flour with your fingertips, lifting and crumbling, until the mixture resembles fine breadcrumbs with no visible lumps of butter.

Drizzle the cold water over the crumbs.
Water · 30 ml
Bring the dough together with your hands, pressing and folding just until it holds — stop as soon as it is smooth and avoid overworking it.

Pat the dough into a flat disc and wrap it tightly in cling film.


Place the wrapped dough in the refrigerator.


Leave the dough to rest in the refrigerator for 30 minutes until firm and relaxed.

Remove the dough from the refrigerator.


Preheat the oven to 190 °C.

Rub the tart tin all over with a little butter to grease it thoroughly.

Unwrap the dough onto a lightly floured surface and roll it out from the centre in all directions until it is a round about 3 mm thick and large enough to line a 23 cm tart tin with overhang.

Drape the pastry over the rolling pin, lift it over the tart tin and unroll it gently, then press it into the base and sides without stretching, letting the excess hang over the edge.


Run a knife across the top of the tin to trim away the overhanging pastry cleanly.


Prick the base all over with a fork to prevent it from puffing up during blind baking.


Cut a sheet of baking paper larger than the tin, scrunch it up, then open it out and press it into the pastry case.


Pour in baking beans to fill the lined pastry case.

Place the tart tin in the oven.



Bake the pastry case for 15 minutes until the sides are set and just beginning to colour.


Lift the tart tin out of the oven using oven gloves and set it on a heatproof surface.



Lift out the baking paper and baking beans carefully, holding the paper by its edges, leaving the pastry case in the tin.

Return the empty pastry case in its tin to the oven.



Bake for a further 8 minutes until the base is dry, pale gold and cooked through.


Remove the tart tin from the oven using oven gloves and set aside while you make the filling.



Peel the yellow onion
Yellow onion · 1,000 g

Halve each peeled onion through the root, then slice them as thinly and evenly as possible into half-moons.


Put the butter into a large frying pan.
Unsalted butter · 50 g
Set the pan over a medium-low heat and let the butter melt completely without colouring.

Tip all the sliced onions into the pan and stir to coat them in the butter.

Season the onions with the salt to help them release their liquid.
Fine salt · 0.5 tsp
Add the bay leaves to the onions.
Bay leaf · 2 piece
Tuck the thyme sprigs among the onions.
Fresh thyme · 4 sprig
Cook over a low heat, stirring every 5–10 minutes, for about 50 minutes until the onions are very soft, deeply golden and sweet — do not rush this.


Use tongs to lift out and discard the thyme sprigs and bay leaves, leaving the caramelised onions in the pan.


Crack the eggs into a medium bowl, discarding the shells.

Add the whole milk to the bowl with the eggs.

Add the double cream to the bowl.

Add the black pepper.

Whisk the eggs, cream and spices together until smooth and evenly combined.


Grate the Gruyère on the coarse side of a grater into a small bowl.
Gruyère · 80 g

Spoon the caramelised onions into the pastry case and spread them in an even layer.

Pour the custard mixture slowly over the onions, letting it settle into every gap.

Scatter the grated Gruyère evenly over the surface of the filled tart.

Carefully slide the filled tart tin into the oven.



Bake for 30 minutes until the custard is just set with a slight wobble in the centre and the Gruyère is golden and bubbling.


Remove the tart from the oven using oven gloves and place it on a wire rack.



Leave the tart to cool and settle in its tin for 10 minutes before slicing — this helps the custard firm up and makes it easier to cut cleanly.
