French Toast
French toast made with cinnamon-spiced egg custard and butter-toasted white bread, serving four with vanilla-infused warmth.

Crack the eggs into the large mixing bowl, discarding the shells.

Pour the milk into the bowl with the eggs.

Add the caster sugar to the bowl.

Whisk everything together until the eggs are fully broken down and the mixture is smooth and uniform.


Lay the 8 slices of bread, each about 2 cm thick, on the chopping board.

Lay the bread slices into the custard, pressing each one gently down so it is fully submerged.

Leave the bread to soak in the custard, turning the slices once halfway through, until each piece has absorbed the mixture throughout.

Add half the butter to the large frying pan.

Set the pan over a medium heat and let the butter melt and begin to foam, swirling the pan so it coats the base evenly.

Lift 4 soaked bread slices from the bowl and lay them in a single layer in the foaming butter.

Cook the slices undisturbed until the undersides are deep golden brown, then flip each slice with a spatula and cook the second side until equally golden and the bread feels set through.


Transfer the cooked slices to a plate and keep them in a warm spot while you cook the second batch.

Add the remaining butter to the hot pan.
