Set the oven to 100 °C so you have a warm place to hold each component as it finishes.

Lay the sausages in the large frying pan in a single layer.
Pork sausages · 8 piece
Add half the lard to the pan with the sausages.
Lard · 10 g
Cook the sausages over a medium-low heat, turning them every few minutes with tongs, until deep golden brown all over and cooked through. Check the centre of the largest one reads 71 °C on a thermometer.



Lift the sausages onto the baking tray.

Slide the baking tray into the oven to keep the sausages warm.



Lay the bacon rashers in the same frying pan, still over a medium heat.
Back bacon rashers · 8 piece
Fry the bacon for about 2–3 minutes per side, turning once with tongs, until the fat is golden and the edges are just crisp.


Transfer the bacon to the baking tray in the oven alongside the sausages.


Place the black pudding slices in the hot pan.
Black pudding · 4 piece
Fry the black pudding for about 2 minutes per side until a dark crust forms on each face, then turn carefully with a spatula.


Slide the black pudding onto the baking tray in the oven.


Halve each plum tomato through the equator with a chef's knife.
Plum tomatoes · 4 piece

Place the tomato halves cut-side down in the pan.

Add a little more lard around the tomatoes.
Lard · 10 g
Cook the tomatoes cut-side down for 2–3 minutes until caramelised, then flip and cook for 1 minute more on the skin side.

Move the tomatoes to the baking tray in the oven.


Trim the stalks of the mushrooms flush with a chef's knife so they sit flat.
Chestnut mushrooms · 300 g

Tip the mushrooms into the pan, stalk-side up.

Drop the butter into the pan amongst the mushrooms.
Butter · 20 g
Cook the mushrooms over a medium-high heat, stirring occasionally, until golden and any liquid has evaporated.


Season the mushrooms with a pinch of salt.
Salt · 1 pinch
Shake a pinch of ground black pepper over the mushrooms.
Ground black pepper · 1 pinch
Spoon the mushrooms onto the baking tray in the oven.


Tip the baked beans into a small saucepan.
Baked beans · 800 g
Warm the beans over a low heat, stirring occasionally, until steaming hot throughout.

Cut 8 slices of bread with a bread knife, each about 1 cm thick.
White bread · 8 slice

Lay the bread slices in the large frying pan over a medium heat.

Drop the remaining butter into the pan around the bread slices.

Fry the bread for about 2 minutes per side, pressing gently with a spatula, until each face is deep golden and crisp.


Transfer the toast to the baking tray in the oven to keep warm.


Add the remaining lard to the pan and let it melt over a medium heat.

Crack the eggs one by one into the pan, spacing them apart and discarding the shells.
Egg · 8 piece
Scatter a pinch of salt over the eggs.
Salt · 1 pinch
Shake a pinch of ground black pepper over the eggs.

Cook the eggs undisturbed over a medium-low heat, tilting the pan and spooning the hot fat over the whites until they are just set but the yolks are still runny. Use pasteurised eggs for runny yolks, or cook them 3 minutes more until firm.

Using oven gloves, pull the baking tray out of the oven.



Arrange 2 sausages, 2 bacon rashers, a slice of black pudding, 2 tomato halves, a portion of mushrooms and 2 slices of toast on each warmed plate.
Spoon the hot baked beans onto each plate beside the other components.
Slide 2 fried eggs onto each plate to complete the breakfast.
